- 1 tbsp sesame seeds
- fresh coriander (cilantro), chopped (stems finely chopped for sauce, leaves reserved for garnish)
- 4 tbsp Marion’s Kitchen Crispy Chilli Oil
- 3 tbsp soy sauce
- 2 tbsp Chinese black vinegar
- 2 tsp sweet dark soy sauce
Instructions
- Cook the pasta: Bring a large pot of salted water to a boil and cook the pappardelle according to the package instructions (usually about 7-9 minutes), until al dente. Drain and set aside.
- Prepare the spicy sauce base: While the pasta cooks, heat the vegetable oil in a small saucepan over medium-high heat for 2-3 minutes until it is just hot but not smoking. Peel and finely chop the garlic and place it in a large heatproof bowl. Add the chili powder, sesame seeds, and finely chopped coriander stems to the bowl.
- Combine sauce ingredients: Add Marion’s Kitchen Crispy Chilli Oil, soy sauce, Chinese black vinegar, and sweet dark soy sauce to the bowl with the garlic and spices. Stir everything together until well mixed.
- Infuse the sauce: Carefully pour the hot vegetable oil over the sauce mixture in the bowl to release the flavors and aromas. Stir immediately to combine all the ingredients well.
- Toss pasta with sauce: Using tongs, transfer the hot, drained pappardelle into the bowl with the spicy sauce. Toss thoroughly so each strand is evenly coated with the flavorful sauce.
- Serve: Divide the coated noodles among serving bowls. Top each bowl with the long strips of fresh cucumber and roughly chopped coriander leaves for a fresh, crunchy contrast. Serve immediately and enjoy!
