Description
These 2-Ingredient Cottage Cheese Wraps are a simple, high-protein alternative to traditional tortillas or wraps. Made from just cottage cheese and eggs blended into a smooth batter and cooked into thin, crepe-like rounds, they are versatile and perfect for breakfast, lunch, or dinner. Optional seasonings like garlic powder or Italian herbs add extra flavor, making these wraps a delicious, gluten-free, and low-carb choice.
Ingredients
Scale
Main Ingredients
- 1 cup full-fat cottage cheese (strained if watery)
- 2 large eggs
Optional Add-Ins
- Garlic powder or Italian seasoning to taste
- A pinch of salt and pepper
- Nutritional yeast for cheesy flavor (optional)
Instructions
- Blend the Ingredients: Add 1 cup of cottage cheese and 2 large eggs into a blender. Include any desired seasonings like garlic powder, Italian seasoning, salt, pepper, or nutritional yeast. Blend for about 20–30 seconds until the mixture is completely smooth and uniform.
- Preheat and Grease the Pan Properly: Heat a small nonstick skillet (8–10 inch) over low to medium-low heat. Lightly grease the pan using oil or cooking spray. Allow the pan to heat for at least 2 minutes before adding the batter to ensure the wrap doesn’t stick.
- Pour and Spread the Batter Thinly: Pour about 1/3 of a cup of the batter into the center of the hot skillet. Immediately tilt and swirl the pan to spread the batter into a thin, even layer similar to making a crepe. The batter should be thin but not see-through, forming a delicate round shape.
- Cook the Wrap: Let the wrap cook undisturbed for 3–5 minutes until the top appears dry, edges start to pull away from the pan, and a spatula slides underneath with no resistance. Carefully flip the wrap and cook the other side for 1–2 minutes until golden brown and firm. Avoid flipping too early to prevent tearing.
- Let Cool and Serve: Transfer the cooked wrap to a plate and allow it to cool for 2–3 minutes. Repeat the process with the remaining batter. Once slightly cooled, use the wraps as you would tortillas—fill, roll, or fold with your favorite fillings.
Notes
- Ensure the cottage cheese is well-drained to prevent watery batter and fragile wraps.
- Use low to medium-low heat to avoid burning and sticking.
- Be patient when cooking on the first side; flipping too early may cause the wrap to tear.
- These wraps are gluten-free and high in protein, great for low-carb diets.
- Add seasonings according to your taste to customize the flavor.
- Store any leftover wraps wrapped tightly in the refrigerator for up to 2 days.
