- 1/2 cup tapioca starch or arrowroot starch (60g)
- 1/2 cup chickpea flour (50g)
- 1 cup unsweetened coconut milk, from a can (240ml)
Instructions
- Prepare Batter: In a medium bowl, whisk together the tapioca starch and chickpea flour until well combined. Gradually stir in the unsweetened coconut milk to form a thick, smooth, lump-free batter.
- Preheat Pan: Heat a large non-stick skillet or a seasoned cast iron pan over medium heat until hot.
- Cook Tortillas: Pour about 1/4 cup of batter onto the hot skillet. Using the back of a spoon, spread the batter into a thin, even circle about 6 inches in diameter. Cook for 1 to 2 minutes until the edges are set and tiny air bubbles appear on the surface.
- Flip and Cook Other Side: Flip the tortilla carefully and cook the other side for another 1 to 2 minutes until cooked through and lightly golden.
- Cool and Repeat: Transfer the cooked tortilla to a plate to cool. Repeat the process with the remaining batter.
- Store and Serve: Store cooked tortillas in an airtight container or ziplock bag in the refrigerator. They will firm up when chilled, so bring them to room temperature for about 30 minutes or warm in the microwave for 10 to 20 seconds before use to regain softness.

- Use a well-seasoned cast iron skillet or a good quality non-stick pan for best results.
- If you prefer, substitute arrowroot starch for tapioca starch at a 1:1 ratio.
