  • Author: Rafael
  • Total Time: 30 minutes
  • Yield: 4 servings 1x

Description

This 30-Minute Pepper Steak Stir Fry is a quick and flavorful dish featuring tender flank steak and colorful bell peppers cooked in a savory soy-ginger sauce. Perfect for a healthy weeknight dinner, it combines fresh ingredients with a simple cooking technique to deliver a satisfying meal in under half an hour.

Ingredients

Scale

For the Stir Fry

  • 1 tbsp oil (olive, avocado, or vegetable)
  • 1 large red bell pepper, cut into thin strips
  • 1 large green bell pepper, cut into thin strips
  • 2 lbs flank steak, cut into thin strips
  • 2 garlic cloves, pressed
  • 1 tbsp fresh ginger, grated

For the Sauce

  • 1/3 cup soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp corn starch

Instructions

  1. Make Sauce: In a small bowl, whisk together the soy sauce, brown sugar, and corn starch until fully combined. Set this mixture aside for later use.
  2. Cook Bell Peppers: Preheat a wok or large skillet over medium heat and add the oil. Add the sliced red and green bell peppers and sauté until they become golden brown and slightly tender, which should take about 3 minutes. Remove the peppers from the pan and set them aside.
  3. Cook Beef: Increase the heat to high and add the flank steak strips to the pan. Cook the beef, stirring occasionally, until the strips are browned and cooked through, forming a rich crust on the outside.
  4. Combine: Return the cooked bell peppers back into the pan with the beef. Pour the prepared soy-ginger sauce over the mixture. Stir well to evenly coat everything and cook together for an additional 2 to 4 minutes, allowing the sauce to thicken and the flavors to meld.
  5. Enjoy: Remove the pan from heat. Serve your pepper steak stir fry hot alongside your favorite grain or noodles for a complete and delicious meal.

Notes

  • You can substitute flank steak with sirloin or skirt steak for similar results.
  • For a gluten-free option, use tamari sauce instead of soy sauce.
  • If you want extra vegetables, feel free to add sliced onions or snap peas.
  • Serve with steamed rice, quinoa, or noodles depending on your preference.
  • To keep the meat tender, slice the steak thinly against the grain.
