A bowl of cooked noodles with visible layers of light brown noodles mixed with thin slices of red and yellow bell peppers, lightly browned bits of cabbage, and topped with chopped green onions spread evenly across the dish. The noodles have a glossy and slightly oily texture, sitting in a deep white bowl placed on a white marbled surface. In the background, another similar bowl of noodles is partially visible with a small wooden bowl filled with chopped green herbs behind it, and the front part of an electric pressure cooker on the left side. A folded checkered cloth and a gold utensil are placed near the bowl. Photo taken with an iphone --ar 4:5 --v 7

Ingredients

  • ¼ cup honey
  • ¼ cup soy sauce
  • 2 tablespoons rice vinegar
  • 3 cloves garlic, minced (or 1 teaspoon garlic powder)
  • 1 tablespoon grated peeled fresh ginger (or store-bought ginger paste)
  • 1 tablespoon sesame oil
  • 1 teaspoon Sriracha
  • 2 teaspoons neutral cooking oil
  • 2 bell peppers, sliced
  • 1 lb ground chicken
  • 1 14-oz package coleslaw mix
  • 3 packages instant ramen noodles, seasoning discarded (3 oz / 85 g per package)
  • 1.5 cups water, divided
  • Sliced green onion, for garnish
  • Sesame seeds, for garnish
  • Hot sauce, optional for serving

Instructions

  1. Step 1: In a medium bowl, whisk together honey, soy sauce, rice vinegar, garlic, ginger, sesame oil, and Sriracha to make the sauce. Set aside.
  2. Step 2: (Optional) Turn on the Sauté function on the Instant Pot and wait until it indicates “hot”. Add the cooking oil and sauté the sliced bell peppers until fragrant and slightly softened. Remove from the pot and set aside.
  3. Step 3: Using the Sauté function, add ground chicken to the pot (add a bit more oil if needed). Break the chicken into bite-size pieces as it cooks until no longer pink, about 7-8 minutes. Turn off the Sauté function.
  4. Step 4: Pour ¼ cup water into the pot and use a flat-bottomed spatula to scrape any browned bits off the bottom. This prevents the burn warning during pressure cooking.
  5. Step 5: Stir in the coleslaw mix and pour the prepared sauce over it. If you skipped sautéing the bell peppers, layer them on top of the coleslaw. Break each ramen noodle package into 3-4 pieces and layer on top.
  6. Step 6: Pour the remaining 1¼ cups of water evenly over the noodles. Do not stir.
  7. Step 7: Close the lid and set the valve to sealing. Pressure cook on Manual (or Pressure Cook) High pressure for 1 minute. When done, quick release the pressure.
  8. Step 8: Open the lid and use tongs to stir gently, coaxing the noodles apart. If you sautéed the bell peppers, mix them in now. Place the lid slightly ajar and let the dish rest for 5 minutes to allow the noodles to fully soften and absorb the sauce.
  9. Step 9: Serve garnished with sliced green onions and sesame seeds. Add hot sauce if desired.

Tips & Variations

  • For extra flavor, use fresh ginger instead of store-bought paste when possible.
  • Substitute ground chicken with ground turkey or pork if preferred.
  • Add more veggies like snap peas or shredded carrots for added crunch and color.
  • To make it vegetarian, replace ground chicken with firm tofu and use vegetable broth instead of water.

Storage

Store leftovers in a sealed container in the refrigerator for up to 4 days. Reheat gently in the microwave or on the stovetop, adding a splash of water if the noodles seem dry.

How to Serve

A bowl of cooked noodles sits in the center with three layers visible: the base layer is light brown cooked noodles, the middle layer has bright red and yellow cooked bell pepper strips, and the top layer is sprinkled with fresh green chopped scallions. The bowl is dark gray with a textured rim, placed on a white marbled surface. Around the bowl, parts of two more similar bowls and a separate bowl filled with chopped scallions are visible, along with a folded black and white checkered cloth and two forks near the bottom left. photo taken with an iphone --ar 4:5 --v 7

  • Author: Rafael
  • Total Time: 25 minutes
  • Yield: 4 servings 1x

Description

This Instant Pot Chicken Ramen Stir Fry is a quick and flavorful one-pot meal combining tender ground chicken, crisp veggies, and tender ramen noodles all cooked together in a savory honey-soy sauce with ginger and garlic. It’s perfect for a weeknight dinner when you want an easy yet satisfying dish with an Asian-inspired twist.

Ingredients

Scale

Sauce

  • ¼ cup honey
  • ¼ cup soy sauce
  • 2 tablespoons rice vinegar
  • 3 cloves garlic, minced (or 1 teaspoon garlic powder)
  • 1 tablespoon grated peeled fresh ginger (or store-bought ginger paste)
  • 1 tablespoon sesame oil
  • 1 teaspoon Sriracha

Main Ingredients

  • 2 teaspoons neutral cooking oil (vegetable or canola oil)
  • 2 bell peppers, sliced
  • 1 lb ground chicken
  • 1 14-oz package coleslaw mix
  • 3 packages instant ramen noodles, seasoning discarded (3 oz / 85 g per package)
  • 1.5 cups water, divided

To Garnish

  • Sliced green onion
  • Sesame seeds
  • Hot sauce (optional)

Instructions

  1. Make the sauce: In a medium bowl, whisk together honey, soy sauce, rice vinegar, minced garlic, grated ginger, sesame oil, and Sriracha until well combined. Set aside.
  2. Optional sauté bell peppers: Turn on the Sauté function on your Instant Pot and wait until it reads “hot.” Add the neutral cooking oil and sauté the sliced bell peppers until they become fragrant and slightly softened, about 2-3 minutes. Remove the peppers from the pot and set aside.
  3. Cook the chicken: Using the Sauté function again, add the ground chicken to the hot insert. Break the chicken into bite-sized pieces as it cooks and continue sautéing until fully cooked and no longer pink, about 7-8 minutes. Turn off the Sauté function.
  4. Deglaze the pot: Pour in ¼ cup of water and use a flat-bottomed spatula to scrape off any browned bits stuck to the bottom of the pot to prevent a burn notice.
  5. Add remaining ingredients: Stir in the coleslaw mix and pour the prepared sauce over the top. If you did not sauté the bell peppers earlier, layer them now on top of the coleslaw. Break each bundle of ramen noodles into 3-4 pieces and layer them on top. Pour the remaining 1 ¼ cups of water evenly over the noodles. Do not stir.
  6. Pressure cook: Close the lid and set the valve to sealing. Pressure cook on High (Manual) for 1 minute. After cooking, perform a quick pressure release.
  7. Stir and rest: Open the lid carefully. Use kitchen tongs to gently stir and separate the noodles; it’s okay if they’re not fully cooked yet—they will soften during resting. If you sautéed the bell peppers earlier, gently mix them back in now. Place the lid askew on the pot and let the dish rest for 5 minutes to allow noodles to fully absorb the sauce.
  8. Serve: Serve hot garnished with sliced green onions, sesame seeds, and hot sauce if desired. Store any leftovers in a sealed container in the refrigerator and consume within 4 days.

Notes

  • If you prefer softer bell peppers, don’t skip the sauté step; otherwise, they will remain crunchier.
  • Discard the seasoning packets from the instant ramen to keep control over the sodium and flavor.
  • Feel free to adjust the amount of Sriracha to suit your spice preference.
  • Breaking the noodles into pieces helps them cook evenly and fit better in the Instant Pot.
  • Resting the dish after cooking ensures the noodles fully soften and soak up the sauce.
