Ingredients

  • 2 1/4 cup water
  • 6 oz brown rice noodles (pad thai noodles or other noodles, or use angel hair pasta)
  • 1/2 cup or more sliced carrots
  • 1/2 of a large red bell pepper, sliced
  • 4 oz cubed tofu (about 3/4 cup)
  • 2 tbsp scallions, chopped (optional)
  • 2 to 3 tsp sriracha (adjust to taste)
  • 2 to 3 tsp soy sauce (use certified gluten-free if needed)
  • 1/2 tsp garlic powder (or 2 tsp minced garlic, or both)
  • 1 tbsp ginger paste or minced ginger
  • 3 tbsp or more almond butter (or peanut butter)
  • 1 tsp lemon or lime juice
  • 1/2 tsp white vinegar
  • 1 tbsp or more sugar (or other sweetener)
  • 1/4 tsp salt, or to taste
  • Cayenne to taste (about 1/3 tsp or more)
  • 1/2 loaded cup chopped celery (or bok choy)
  • 2 tbsp or more cilantro or basil (or both for garnish)
  • Roasted peanuts for garnish (optional)

Instructions

  1. Step 1: Add the water to a medium saucepan.
  2. Step 2: Add the noodles and push them down so they are submerged in the water. Arrange the sliced carrots and red bell pepper around the edges or on top of the noodles.
  3. Step 3: Add the cubed tofu, scallions (if using), sriracha, soy sauce, garlic powder, ginger, almond butter, lemon or lime juice, white vinegar, sugar, salt, and cayenne into the pot.
  4. Step 4: Bring the mixture to a boil over medium heat. Stir frequently and well to help the nut butter dissolve and to ensure the noodles cook evenly.
  5. Step 5: Once boiling, add the chopped celery and stir it in. Cook for an additional 1 to 2 minutes.
  6. Step 6: Check the noodles for doneness, then taste and adjust the sweetness, heat, and lemon flavor to your preference.
  7. Step 7: Fold in the cilantro, basil, or baby spinach if using. Let the pot sit off the heat for another minute.
  8. Step 8: Serve garnished with roasted peanuts or sprouts and a squeeze of fresh lime. A sprinkle of red pepper flakes can add extra heat if desired.

Tips & Variations

  • Use almond butter for a slightly milder, nuttier flavor, or swap in peanut butter for a classic taste.
  • Add chopped green chiles for an extra spicy kick.
  • Feel free to swap tofu for cooked chicken or shrimp for a non-vegetarian version.
  • Baby spinach or bok choy can be stirred in at the end for extra greens.
  • If you prefer a thinner sauce, add a splash of water or broth while cooking.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days. Gently reheat in a skillet or microwave, adding a little water if the noodles have absorbed too much sauce and become dry.
