Ingredients

  • 16oz Ribeye steak
  • 12 Colossal shrimp
  • 1 bag frozen peas and carrots
  • 4 cups day-old rice
  • 1 large yellow onion, diced
  • 4 large eggs
  • 1 bunch green onions
  • 1 tbsp Cajun seasoning
  • 2 tbsp SPG blend (Salt, Pepper, Garlic)
  • 1/4 cup Bachan’s Original seasoning
  • 1 cup mayonnaise
  • 1/4 cup water
  • 2 tbsp ketchup
  • 1 tsp sugar
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 4 tbsp butter

Instructions

  1. Step 1: Cube the partially frozen ribeye into bite-sized pieces. Season the steak cubes with Bachan’s Original and SPG blend.
  2. Step 2: Season the thawed colossal shrimp with Cajun seasoning and set aside.
  3. Step 3: Prepare the yum yum sauce by mixing mayonnaise, water, ketchup, sugar, garlic powder, and smoked paprika in a small bowl. Set aside.
  4. Step 4: Heat your cooking surface to 450°F. Cook the seasoned ribeye steak cubes for about 5 minutes until browned and cooked through. Remove and set aside.

  6. Step 6: Add the diced onion and frozen peas and carrots to the cooking surface. Sauté for 5 to 7 minutes until the onion is translucent and vegetables are warmed through.
  7. Step 7: Add the day-old rice and butter to the vegetable mixture. Stir well to combine and heat through evenly.
  8. Step 8: Push the rice mixture to the side and scramble the four eggs in the cleared space. Once scrambled, mix the eggs thoroughly into the rice.
  9. Step 9: Return the cooked steak and shrimp to the pan and gently fold them into the fried rice just before serving.
  10. Step 10: Serve the fried rice topped with green onions and accompanied by the homemade yum yum sauce.

Tips & Variations

  • Use day-old rice to prevent clumping and achieve a better fried rice texture.
  • Substitute ribeye with sirloin or flank steak for a leaner option.
  • Add diced bell peppers or mushrooms for extra vegetable variety.
  • Adjust the amount of Cajun seasoning on shrimp to control the spice level.
  • For a dairy-free version, replace butter with a neutral oil like vegetable or avocado oil and omit the mayo in the yum yum sauce, using a dairy-free alternative.

Storage

Store leftover fried rice in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet or microwave until warmed through, stirring occasionally to ensure even heating. The yum yum sauce is best stored separately and added fresh when serving.

FAQs

Can I use fresh rice instead of day-old rice?

Freshly cooked rice tends to be moist and soft, which can make fried rice mushy. It’s best to use day-old rice that’s been refrigerated, as it is drier and firmer, resulting in a better texture when fried.

What if I don’t have Bachan’s Original seasoning?

Bachan’s Original adds a savory, slightly sweet flavor. If you don’t have it, you can substitute with a mixture of soy sauce and a pinch of sugar or use a quality all-purpose seasoning blend that includes garlic and onion powder.
