  • Author: Rafael
  • Total Time: 10 minutes
  • Yield: 9 energy balls 1x
  • Diet: Gluten Free

Description

Almond Joy Energy Balls are a delicious and nutritious no-bake snack combining the rich flavors of coconut, almond, and dark chocolate. These bite-sized treats are easy to prepare and perfect for a quick energy boost or a guilt-free dessert.

Ingredients

Scale

Dry Ingredients

  • 3/4 cup Unsweetened Desiccated Coconut
  • 1 cup Almond Flour
  • 2 tablespoons Unsweetened Desiccated Coconut (for coating)
  • 9 Roasted Almonds
  • 1/3 cup Dark Chocolate Chips (melted)

Wet Ingredients

  • 2 tablespoons Coconut Milk
  • 1/3 cup Maple Syrup
  • 1/4 teaspoon Coconut Extract

Instructions

  1. Mix Ingredients: In a mixing bowl, combine the unsweetened desiccated coconut, almond flour, maple syrup, coconut milk, and coconut extract. Stir with a rubber spatula until well mixed.
  2. Form Dough: Lightly oil your hands and squeeze the dough to bring everything together. If the dough is too dry, add a little more coconut milk; if too wet, add more almond flour. The dough should be soft, slightly wet, but hold its shape when rolled.
  3. Roll Balls: Using lightly oiled hands, roll about 1 1/2 tablespoons of dough into a ball. Repeat until all dough is used, making approximately 9 energy balls.
  4. Coat with Coconut: Place the extra 2 tablespoons of desiccated coconut in a small bowl, then roll each energy ball in the coconut to coat evenly.
  5. Add Almonds: Press a whole roasted almond on the top of each ball. The balls may flatten slightly; re-roll them gently between your hands to enclose the almond and reshape them into round balls.
  6. Melt Chocolate: Melt the dark chocolate chips in a microwave-safe bowl using 30-second bursts until smooth.
  7. Drizzle Chocolate: Drizzle the melted chocolate over the energy balls using a spoon or fork for a decorative finish.
  8. Set Chocolate: Place the balls in the freezer for 10 minutes to allow the chocolate to set properly.
  9. Store: Transfer the energy balls to an airtight container and refrigerate. They can be kept fresh for up to 5 days.

Notes

  • Adjust coconut milk or almond flour to get the right dough consistency for rolling.
  • Use dark chocolate chips for a healthier option with less sugar.
  • Store the energy balls in the refrigerator for the best texture and freshness.
  • These energy balls make a great grab-and-go snack for busy days or post-workout fuel.
