- 2 tablespoons Coconut Milk
- 1/3 cup Maple Syrup
- 1/4 teaspoon Coconut Extract
Instructions
- Mix Ingredients: In a mixing bowl, combine the unsweetened desiccated coconut, almond flour, maple syrup, coconut milk, and coconut extract. Stir with a rubber spatula until well mixed.
- Form Dough: Lightly oil your hands and squeeze the dough to bring everything together. If the dough is too dry, add a little more coconut milk; if too wet, add more almond flour. The dough should be soft, slightly wet, but hold its shape when rolled.
- Roll Balls: Using lightly oiled hands, roll about 1 1/2 tablespoons of dough into a ball. Repeat until all dough is used, making approximately 9 energy balls.
- Coat with Coconut: Place the extra 2 tablespoons of desiccated coconut in a small bowl, then roll each energy ball in the coconut to coat evenly.
- Add Almonds: Press a whole roasted almond on the top of each ball. The balls may flatten slightly; re-roll them gently between your hands to enclose the almond and reshape them into round balls.
- Melt Chocolate: Melt the dark chocolate chips in a microwave-safe bowl using 30-second bursts until smooth.
- Drizzle Chocolate: Drizzle the melted chocolate over the energy balls using a spoon or fork for a decorative finish.
- Set Chocolate: Place the balls in the freezer for 10 minutes to allow the chocolate to set properly.
- Store: Transfer the energy balls to an airtight container and refrigerate. They can be kept fresh for up to 5 days.
