Chicken Filling
- 2 chicken breasts, finely diced

- 1 (397g) bag coleslaw
- 4 green onions, thinly sliced
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tbsp soy sauce
- 1 tbsp honey
Wonton Shells & Garnishes
- 16 wonton wrappers
- Cooking spray or olive/canola oil (for brushing)
- Sweet chili sauce, to serve
- Chopped cilantro, to serve
- Sesame seeds, to serve
Instructions
- Prepare and bake wonton shells: Preheat the oven to 375°F. Spray the wonton wrappers with cooking spray or lightly brush them with olive or canola oil. Drape them over the edge of a 9×13 baking dish and bake for 7-8 minutes, watching carefully to avoid burning. Remove from the oven and gently pull the wonton shells apart while still pliable to make them easier to fill. Return to the oven and bake for an additional 7-8 minutes until crispy.
- Cook the chicken filling: In a large bowl, combine the finely diced chicken breasts with hoisin sauce, sesame oil, soy sauce, minced garlic, and minced fresh ginger. Heat a large skillet over high heat and sauté the chicken mixture for 7-8 minutes, tossing frequently until the chicken is cooked through and slightly caramelized.
- Make the coleslaw: In a separate large bowl, toss together the bag of coleslaw mix with thinly sliced green onions, sesame oil, rice vinegar, soy sauce, and honey. Mix well to combine and set aside.
- Assemble the tacos: Spoon the warm hoisin chicken mixture into the crispy wonton shells. Top with a generous portion of the fresh coleslaw. Drizzle each taco with sweet chili sauce and sprinkle with chopped cilantro and sesame seeds. Serve immediately and enjoy!
