Instructions
- Prepare the pudding: In a large bowl, whisk together the banana cream pudding mix and cold milk until fully combined. Continue whisking until the mixture thickens, about 1 minute.
- Fold in whipped topping: Gently fold one container of whipped topping into the pudding mixture until evenly incorporated. Set aside.
- Layer graham crackers: Place one-quarter of the graham crackers into the bottom of a 9×13-inch baking dish, breaking them as needed to fit snugly.
- Add pudding layer: Spread one-third of the pudding mixture evenly over the graham cracker layer. Repeat this layering process two more times, alternating graham crackers and pudding, finishing with a final layer of graham crackers on top. Some small pieces may be left over—reserve them for garnish.
- Top with whipped topping: Smooth the remaining container of whipped topping over the top layer of graham crackers, ensuring none of the crackers are exposed. Cover the dish tightly with plastic wrap.
- Chill the cake: Refrigerate the icebox cake for at least 6 hours, or preferably overnight, to allow the flavors to meld and the cake to set.
- Garnish and serve: Before serving, sprinkle crushed leftover graham crackers and arrange fresh banana slices on top. Slice and serve chilled.
