  • 3 cups Blueberries (fresh or frozen; 1 cup frozen and 2 cups fresh recommended)
  • 2 Tablespoons Fresh Lemon Juice (approximately ½ of a lemon)
  • ¼ to cup Honey (adjust according to sweetness of berries)

Instructions

  1. Blend Ingredients: Put all of the blueberries, lemon juice, and honey into a blender or food processor and puree until smooth.
  2. Pour into Molds: Pour the pureed mixture into popsicle molds, leaving about ¼ inch of space at the top to allow for expansion as they freeze.
  3. Initial Freeze: Place the popsicle molds in the freezer for approximately 1 hour to start firming up the mixture.
  4. Add Lid and Sticks: After 1 hour, place the lid on the molds and push the sticks in, leaving about 1 ¼ inches of the sticks exposed above the mold.
  5. Freeze Completely: Freeze the popsicles for an additional 4 to 6 hours or preferably overnight to ensure they are fully set.
  6. Release Popsicles: To remove the popsicles from the molds, gently run warm water on the bottom of the molds for a few seconds. Then try to pull out a popsicle carefully. If it doesn’t come out easily, run warm water for a few more seconds and try again.

  • You can adjust the honey amount based on the sweetness of your berries and personal preference.
  • Using a mix of fresh and frozen blueberries adds depth to the flavor and helps the texture.
  • Ensure to leave space in the mold for the mixture to expand when freezing.
