Instructions
- Prepare Tomato Mixture: In a bowl, combine chopped tomatoes, torn basil leaves, minced garlic, extra virgin olive oil, balsamic vinegar, dried oregano if using, and salt and freshly ground black pepper to taste. Toss gently to mix all ingredients well. Let the mixture sit while preparing the bread to allow flavors to meld.
- Toast the Bread: Preheat your oven to 400°F (200°C). Arrange the thick slices of ciabatta, sourdough, or rustic bread on a baking sheet. Brush each slice lightly with olive oil and season with salt and pepper. Bake in the oven for 10–15 minutes or until the bread is golden and crisp. While the toast is still warm, rub each slice with the cut side of the halved garlic clove to impart a subtle garlic flavor.
- Assemble Burrata on Toast: Tear the drained burrata cheese into large chunks. Using the back of a spoon, spread these pieces gently and evenly over each toasted slice of bread, ensuring coverage but handling the cheese carefully to maintain its creamy texture.
- Add Tomato Topping and Garnish: Spoon the prepared tomato mixture over the burrata on each toast, being careful to avoid adding too much liquid to prevent sogginess. Drizzle with balsamic glaze if using, add extra basil leaves for freshness, and finish with a sprinkle of flaky sea salt. Drizzle a little extra olive oil if desired.
