  • 1 lb. lean ground beef
  • Salt and pepper, to taste
  • 1 medium yellow onion, diced finely
  • 2 cloves garlic, minced
  • 4 cups chopped green cabbage
  • 2 medium carrots, quartered and sliced
  • 4 cups low-sodium beef broth
  • 3 8 oz. cans tomato sauce
  • 1/2 cup white rice, uncooked
  • 1 bay leaf
  • 3 tbsp. light brown sugar
  • 2 tbsp. fresh chopped parsley

Instructions

  1. Heat the Oil and Brown the Beef: In a dutch oven or large soup pot, heat 2 teaspoons of vegetable oil over medium-high heat. Add 1 pound of lean ground beef, season with salt and pepper, and cook until browned, breaking the meat apart as it cooks.
  2. Sauté Onions and Garlic: Add the finely diced yellow onion and minced garlic cloves to the pot with the beef. Sauté for 2-3 minutes until the onions become tender and translucent, which enhances the aroma and flavor base of the soup.
  3. Add Vegetables and Liquids: Stir in 4 cups of chopped green cabbage, 2 medium quartered and sliced carrots, 3 cans (8 oz. each) of tomato sauce, and 4 cups of low-sodium beef broth. Mix well to combine all the ingredients evenly.
  4. Add Rice, Seasonings, and Simmer: Incorporate 1/2 cup of uncooked white rice, 1 bay leaf, and 3 tablespoons of light brown sugar. Stir everything together, then bring the soup to a gentle simmer over medium heat.
  5. Cook Until Rice is Tender: Let the soup simmer uncovered for about 25 minutes, stirring occasionally. This cooking time allows the rice to fully cook and the flavors to meld together.
  6. Finish and Serve: Remove and discard the bay leaf. Sprinkle 2 tablespoons of fresh chopped parsley on top for a fresh, herbal finish. Serve hot and enjoy the comforting flavors of this cabbage roll inspired soup.
