Scale
Cheese Base
- 3 (8 ounce) wheels Triple Crème Brie, cold
- 3 tablespoons heavy cream
Toppings
- 2 tablespoons fig jam
- 2 slices prosciutto, torn into pieces
- 4 small salami slices, diced
- 2 tablespoons sliced kalamata olives
- 2 tablespoons sliced cornichons
- 2 tablespoons diced dried apricots
- 2 tablespoons chopped candied pecans
- 2 tablespoons honey
- 1 tablespoon chopped fresh rosemary
- 2 rosemary sprigs, for garnishing
For Serving
- Crackers or crostini, for dipping
Instructions
- Remove Brie Rind – Take one wheel of brie out of the refrigerator at a time and carefully slice off as much of the rind as possible using a cheese slicer or sharp knife.
- Soften the Brie – Cut the rind-removed brie wheel into chunks and let rest at room temperature for about 30 minutes until completely softened, which makes it easier to whip.
- Blend the Brie – Place the softened brie chunks into a food processor and blend until well combined, stopping occasionally to scrape down the sides. This should take 2-4 minutes depending on your processor’s power.
- Add Cream for Fluffiness – Pour in the heavy cream and continue blending for about 1 minute until the mixture becomes super creamy and fluffy, yielding approximately 2 cups of whipped brie.
- Spread Brie on Plate – Transfer the whipped brie onto a serving plate evenly to create a base layer for the dip.
- Warm and Drizzle Fig Jam – Heat the fig jam in a small microwave-safe bowl for 10 seconds until just melty enough to drizzle, then drizzle and swirl it over the whipped brie.
- Add Toppings – Sprinkle torn prosciutto, diced salami, kalamata olives, sliced cornichons, diced dried apricots, and chopped candied pecans evenly over the fig jam layer.
- Honey and Rosemary – Drizzle honey evenly over the entire dip and sprinkle the chopped fresh rosemary to add herbaceous notes.
- Garnish – Place a few fresh rosemary sprigs in the center of the dip for an attractive garnish.
- Serve – Offer crackers or crostini alongside the dip for dipping and enjoying immediately.
Notes
- Removing the rind helps achieve a smooth, whipped texture but you can leave some rind if preferred for slight texture.
- Room temperature brie blends easier and whips to a fluffier consistency than cold cheese.
- Adjust the amount of honey and fig jam to taste for sweetness balance.
- This dip is best served fresh but can be made a few hours ahead and refrigerated; bring to room temperature before serving.
- Use a food processor or a powerful blender to ensure smooth, creamy brie.
