  • 1 green onion, chopped

  • 1 handful cilantro, chopped
  • 1 tablespoon lime juice
  • Salt and fresh cracked pepper, to taste
  • 1 tablespoon oil

Instructions

  1. Prepare the batter: In a large bowl, combine the corn, cornmeal, all-purpose flour, smoked paprika, egg, grated parmesan cheese, chopped green onion, chopped cilantro, and lime juice. Stir well until all ingredients are evenly mixed. If the mixture seems too dry and does not hold together, add a splash of water to achieve a workable consistency.
  2. Heat the pan: Place a non-stick or cast iron pan on medium heat and add 1 tablespoon of oil, allowing it to heat thoroughly but not smoke.
  3. Cook the fritters: Using a spoon, scoop portions of the corn mixture and form them gently into patties. Place them carefully into the hot pan. Cook for about 4 minutes on one side or until golden brown and crisp, then flip and cook the other side for another 4 minutes until both sides are evenly browned and the fritters are cooked through.
  4. Serve and garnish: Remove the fritters from the pan and place on a paper towel to absorb any excess oil. Plate them up and garnish each fritter with a dollop of sour cream or heavy cream. Serve warm and enjoy!

  • If the batter is too thick, add water a teaspoon at a time to prevent dry, crumbly fritters.
