Ingredients

Scale

Salad Ingredients

  • 4 cups broccoli florets (chopped)
  • 1 15-oz can chickpeas (drained and rinsed)
  • 1/4 cup red onion (finely chopped)
  • 1 cup fresh blueberries
  • 2/3 cup dried cranberries
  • 1/2 cup roasted sunflower seeds
  • 2/3 cup feta cheese crumbles (optional)

Dressing Ingredients

  • 1/4 cup mayonnaise
  • 3 tablespoons honey
  • 1/3 cup fresh lemon juice
  • 3/4 teaspoon sea salt (to taste)
  • 2 teaspoons poppy seeds (optional)

Instructions

  1. Prepare the dressing: In a small bowl or measuring cup, whisk together the mayonnaise, honey, fresh lemon juice, and sea salt. Let the dressing sit aside to allow the flavors to meld.
  2. Chop broccoli: Rinse the broccoli thoroughly, then chop it into small, bite-sized florets. Place the broccoli florets into a large mixing bowl.
  3. Add chickpeas: Drain and rinse the chickpeas using a colander. Add them directly to the bowl with the broccoli.
  4. Combine fruits and seeds: Toss in the fresh blueberries, dried cranberries, finely chopped red onion, and roasted sunflower seeds into the bowl with the broccoli and chickpeas.
  5. Add feta cheese: If using, sprinkle the feta cheese crumbles over the salad ingredients.
  6. Dress the salad: Pour the prepared dressing over all the ingredients. Gently toss everything together until the salad is thoroughly coated and combined.
  7. Adjust seasoning: Taste the salad and adjust the seasoning if needed by adding more sea salt, freshly ground black pepper, or an extra splash of lemon juice for brightness.
  8. Serve or chill: Serve the salad immediately for a fresh taste, or cover and chill it in the refrigerator for a refreshing, cold salad experience.

Notes

  • To keep the salad dairy-free, omit the feta cheese.
  • For a vegan version, substitute mayonnaise with vegan mayonnaise and omit honey or replace it with maple syrup.
  • The salad can be prepared a few hours in advance and kept chilled to allow flavors to blend.
  • Poppy seeds add a nice texture and subtle nutty flavor but are optional.
  • Adjust sweetness by varying the amount of honey according to preference.
  • Use freshly squeezed lemon juice for the best flavor.
