Chocolate Coating

  • 10 ounces milk or dark chocolate melting wafers (such as Ghirardelli)
  • 1 cup complementary variety chocolate melting wafers (optional but recommended for drizzling)

Caramel Drizzle

  • 8 ounces soft caramel squares (1 cup), unwrapped (such as Kraft)
  • 2 tablespoons heavy cream

Instructions

  1. Prepare the baking sheet: Line a sheet pan with parchment paper or a silicone baking mat and set aside to keep the apples from sticking and for easy cleanup.
  2. Slice the apples: Slice each apple from top to bottom into 4 or 5 slices about 1/2-inch thick. Optionally, slices can be up to 3/4-inch thick but thicker slices are harder to handle on popsicle sticks. Use a melon baller and a paring knife to carefully remove the stem and carve out seeds or fibrous core from each slice without digging through the entire slice.
  3. Insert the sticks: Insert a 10 mm wide, food-grade wooden popsicle stick into the center of each apple slice from the bottom, pressing about halfway into the fruit. If necessary, create a small slit at the bottom of the slice with a knife to assist insertion.
  4. Melt and dip in chocolate: Melt the milk or dark chocolate wafers using a double boiler or microwave according to package instructions. Pat the apple slices very dry with paper towels before dipping each slice fully into the melted chocolate just past where the stick meets the fruit, letting excess chocolate drip off.
  5. Set the chocolate coating: Place the chocolate-dipped apple slices on the prepared sheet pan in a single layer without touching. Refrigerate for 5-10 minutes until the chocolate sets firmly.
  6. Melt the caramel: Combine the unwrapped caramel squares and heavy cream in a microwave-safe bowl. Microwave on high in 20-30 second increments, stirring between intervals until the mixture is melted and smooth. Set aside to cool slightly.
  7. Prepare additional drizzle (optional): If desired, melt the complementary chocolate wafers following package directions. Allow both the caramel and chocolate drizzles to cool until warm and fluid but not hot to avoid melting the chocolate coating on the apples.
  8. Drizzle and decorate: Drizzle the caramel evenly over the chocolate-coated apple slices, then add the optional chocolate drizzle. Immediately sprinkle with your choice of mini M&M’s, chopped nuts, or other toppings. Refrigerate an additional 10-15 minutes until the caramel and toppings are set.
  9. Serve and store: For best flavor and texture, serve the apple slices within a few hours of assembly. Keep refrigerated until ready to enjoy. Avoid assembling the caramel apple slices the day before to prevent sogginess.
