Jello Mixtures
- 1 box Lime Jello (3 oz)
- 1 box Strawberry Jello (3 oz)
- 1½ cups plain Greek Yogurt (divided)
- 6½ cups sweetened Desiccated Coconut (divided)
Instructions
- Prepare Surface: Cover a moveable surface such as a baking sheet with parchment paper and set aside. This will be used to place the Jello balls once shaped.
- Separate Jello into Bowls: In two medium mixing bowls, put the lime Jello powder in one and the strawberry Jello powder in the other to keep the colors distinct.
- Add Greek Yogurt: Add ¾ cup of plain Greek yogurt into each bowl to add creaminess and help bind the mixtures.
- Add Desiccated Coconut: Place 2½ cups of sweetened desiccated coconut into each bowl to provide texture and coconut flavor.
- Mix Thoroughly: Using separate stirring utensils for each bowl to avoid color mixing, stir the contents until fully combined and uniform in color.
- Prepare Coconut Coating: Divide ¾ cup of desiccated coconut into two small bowls, one for coating the lime balls and the other for the strawberry balls to prevent color crossover.
- Roll Strawberry Balls: Wearing gloves, roll the red strawberry mixture into balls about 1 tablespoon each. Immediately roll each ball in the coconut in one of the small bowls until fully coated. Place the coated balls on the parchment-lined baking sheet.
- Roll Lime Balls: Repeat the rolling and coconut coating process with the lime mixture using the other bowl of coconut to maintain color separation.
- Set in Refrigerator: Place the baking sheet with the coated balls in the refrigerator uncovered for 4 hours or until the balls are firm and set. Then enjoy your festive Jello bites!
