Instructions
- Prepare the baking dish: Spray a 9 x 13-inch baking dish with cooking spray to prevent sticking.
- Crush the cookies: Place all Circus Animal Cookies into a food processor and pulse 3 to 4 times until they are broken into a mix of crumbs and small pieces. Reserve 1/2 cup of the cookie pieces to use as a topping later.
- Melt butter and marshmallows: In a large pot, melt the butter and mini marshmallows over low heat, stirring frequently to prevent burning and to ensure smooth melting.
- Combine ingredients: Remove the melted mixture from heat. Add the Rice Krispies cereal, crumbled cookies, 1 tablespoon of nonpareils, and 1 tablespoon of colored sprinkles to the pot. Stir thoroughly to combine all ingredients evenly. Then sprinkle in another tablespoon each of nonpareils and sprinkles and mix again to distribute.
- Press mixture into pan: Transfer the combined mixture into the prepared baking dish, spreading it evenly using a rubber spatula to compact the treats.
- Add cookie topping: Sprinkle the remaining reserved cookie pieces evenly over the top of the pressed mixture in the pan.
- Melt white chocolate: Divide white chocolate chips equally into two small microwave-safe bowls. Microwave each for 30 seconds and stir until smooth and creamy.
- Drizzle white chocolate: Pour the melted white chocolate from one bowl into a zipper-top sandwich bag, cut a small corner off, and drizzle it decoratively over the Rice Krispie treats.
- Color and prepare pink chocolate: Add a very small amount of red food coloring to the second bowl of melted white chocolate, stirring carefully to achieve a pink hue. Avoid adding too much as it will turn the chocolate red and difficult to adjust. If the chocolate thickens too much, stir in 1/2 teaspoon of heavy cream to loosen it without reheating.
- Drizzle pink chocolate: Place the pink colored chocolate into another zipper-top bag, cut a small corner, and drizzle it over the treats in the opposite direction from the white chocolate drizzle for contrast.
- Add final sprinkles: Sprinkle the remaining tablespoon each of nonpareils and colored sprinkles over the top for a festive finish.
- Cool and set: Allow the treats to cool completely until the chocolate and marshmallow mixture sets firmly, ensuring easy cutting and serving.
