  • Author: Rafael
  • Total Time: 10 minutes
  • Yield: 8 sandwiches (32 small pieces) 1x
  • Diet: Vegetarian

Description

Classic Cucumber Sandwiches are a light and refreshing snack perfect for afternoon tea or elegant gatherings. Soft sandwich bread is layered with a creamy dill-flavored spread and thinly sliced cucumbers for a crisp texture and delicate taste.

Ingredients

Scale

Spread

  • ¾ cup cream cheese (whipped)
  • ¼ cup sour cream (or mayonnaise)
  • 2 tablespoons dill (finely chopped)
  • Kosher salt (to taste)

Sandwich

  • ½ English cucumber (thinly sliced)
  • 8 slices sandwich bread (crusts removed)

Instructions

  1. Prepare the spread: In a bowl, combine the whipped cream cheese, sour cream or mayonnaise, finely chopped dill, and a pinch of kosher salt. Stir well until the mixture is smooth and fully blended.
  2. Apply the spread: Using a small spatula or butter knife, evenly spread the creamy dill mixture on one side of each bread slice.
  3. Layer cucumbers: Place thin slices of cucumber on top of half of the bread slices, overlapping them slightly to cover the surface.
  4. Assemble sandwiches: Top the cucumber-covered slices with the remaining slices of bread, spread side down. Gently press to secure the sandwiches.
  5. Trim and cut: Using a serrated knife, carefully trim off the crusts from each sandwich. Then, cut each sandwich into four small pieces, choosing rectangles or triangles as preferred.
  6. Serve: Arrange the cucumber sandwiches on a serving dish. Optionally garnish with extra dill or additional cucumber slices for an attractive presentation.

Notes

  • For a tangier flavor, use sour cream instead of mayonnaise.
  • Chill the spread mixture before assembling to make spreading easier.
  • English cucumbers are preferred due to their thin skin and fewer seeds.
  • Keep sandwiches covered with a damp cloth or plastic wrap until serving to maintain freshness.
  • Variations include adding a sprinkle of cracked pepper or a hint of lemon zest to the spread for extra flavor.
