Instructions

  1. Cream Butter and Sugar: In the bowl of a stand mixer, combine the room temperature butter and granulated sugar. Cream them together on medium-high speed until the mixture becomes light and fluffy, which should take between 3 to 5 minutes.
  2. Add Eggs and Extracts: Lower the mixer speed to low and add the eggs, vanilla extract, and almond extract to the creamed mixture. Mix until all ingredients are fully incorporated.
  3. Mix Dry Ingredients: Add the all-purpose flour, corn starch, baking soda, and salt to the wet ingredients. Mix on low speed until just combined to avoid overworking the dough.
  4. Fold in Sprinkles: Pour in ¾ cup of sprinkles and use a spatula to gently fold them into the dough, ensuring an even distribution of color and flavor throughout.
  5. Chill the Dough: Chill the dough for at least 30 minutes or up to 24 hours. You can either scoop the cookie dough onto a parchment-lined baking sheet and cover with plastic wrap before chilling or chill the entire bowl wrapped in plastic wrap. If chilling the whole bowl, allow the dough to sit at room temperature for 15 to 20 minutes before scooping.
  6. Preheat Oven and Prepare Cookies: Preheat your oven to 350°F (175°C). Scoop 2-tablespoon portions of dough (about 20 cookies total). Roll the tops of the cookies in the remaining ¼ cup of sprinkles and place them spaced about 2 inches apart on a cookie sheet lined with parchment paper.
