Instructions

  1. Cook the broccoli rice: Microwave the frozen broccoli rice according to the package directions. Once cooked, use a fine strainer to drain and squeeze out as much excess liquid as possible. Set aside the drained broccoli rice to cool.
  2. Preheat oven and prepare baking sheet: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper to prevent sticking and ease cleanup.
  3. Mix ingredients: In a large bowl, combine the cooled broccoli rice, shredded cheddar cheese, egg, almond flour, and your choice of seasoning, such as garlic salt. Stir thoroughly until the mixture is well combined.
  4. Form and flatten rounds: Shape the mixture into about 16 small balls. Place them evenly spaced on the prepared baking sheet. Use your hands to gently flatten each ball into a round shape, allowing them to bake evenly.
