For the Lentil Patties
- 2 cups dry green or brown lentils
- 1 large potato, peeled
- 1 onion, peeled
- 2 whole carrots, peeled

Instructions
- Cook the Lentils and Vegetables: Place the lentils in a large pot and add the whole peeled potato, onion, and carrots on top. Cover with water, lightly season with salt, and cook over medium heat until all ingredients are soft, about 25 to 30 minutes.
- Mash the Mixture: Drain any excess water from the pot. Using a masher, mash the lentils, potato, carrots, and onion together until mostly smooth but still a bit chunky for texture.
- Prepare the Pattie Mixture: Transfer the mashed mixture to a large bowl. Add the breadcrumbs, chopped parsley, paprika, ground cumin, salt, pepper, and chili flakes if using. Mix thoroughly until the mixture binds well. If the mixture is too wet, add additional breadcrumbs until it holds its shape.
- Shape the Patties: Take portions of the mixture and form them into oval or square-shaped patties by firmly pressing with your hands.
- Fry the Patties: Heat a generous amount of oil in a pan over medium heat. Fry the patties on both sides until they are golden brown and crispy, about 3-5 minutes per side. Remove and drain on paper towels to remove excess oil.
- Assemble the Sandwiches: Slice the Turkish bread rolls or pita horizontally. Spread a generous layer of the yogurt-based sauce like Tzatziki on the bread. Layer with tomato slices, the onion-parsley-sumac mixture, 3-4 lentil patties, grilled green peppers if using, and pickles if desired. Press lightly and serve warm.
