Description

This Crock Pot Chicken Fajita Soup is a hearty and flavorful slow-cooked meal combining tender shredded chicken with fresh bell peppers, diced tomatoes, and taco seasoning. Perfect for an easy, hands-off supper that delivers vibrant Tex-Mex flavors with minimal prep.

Ingredients

Scale

Protein

  • 2 lbs boneless skinless chicken breasts

Vegetables

  • 2 cans diced tomatoes (14.5 oz cans each)
  • 1/2 cup onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped

Liquids & Seasonings

  • 2 cups chicken broth
  • 2 tablespoons taco seasoning
  • 2 teaspoons minced garlic

Instructions

  1. Combine Ingredients: Place the chicken breasts, diced tomatoes (with juices), chicken broth, taco seasoning, minced garlic, chopped onion, and chopped green and red bell peppers into a 6-quart crock pot. Stir gently to mix all ingredients evenly.
  2. Cook Slowly: Cover the crock pot with its lid and cook on the low setting for 6 to 8 hours, or alternatively on the high setting for 3 to 4 hours until the chicken is fully cooked and tender.
  3. Shred Chicken: Carefully remove the chicken breasts from the crock pot and shred them using two forks or your hands. Return the shredded chicken to the crock pot and stir well to combine with the soup base.
  4. Serve: Mix the soup well to blend all the flavors. Serve hot with your choice of toppings such as shredded cheese, sour cream, avocado slices, or fresh cilantro.

Notes

  • Use chicken thighs instead of breasts for a juicier texture if preferred.
  • Adjust the amount of taco seasoning based on your desired spice level.
  • For a thicker soup, you can remove the lid during the last 30 minutes of cooking to allow some liquid to evaporate.
  • Leftovers can be refrigerated for up to 3 days or frozen for up to 3 months.
  • Consider serving with warm tortillas or over rice for a complete meal.
