Ingredients
Scale
Steak and Seasoning
- 3 pounds sirloin steak, cut into bite-sized pieces
- 2 teaspoons kosher salt
- 1 teaspoon black pepper
Cooking Ingredients
- 2 tablespoons vegetable oil
- 1 small sweet onion, thinly sliced
- 3 cloves garlic, thinly sliced
- 1 cup unsalted beef stock
- 1 (1 ounce) packet au jus gravy mix
- 4 tablespoons unsalted butter, thinly sliced
Garnish
- Fresh chopped parsley (optional)
Instructions
- Season the steak: Place the bite-sized cubed sirloin steak in a large bowl. Sprinkle with kosher salt and black pepper, tossing well to evenly coat all pieces with seasoning.
- Sear the steak: Heat a large skillet over medium-high heat and add half of the vegetable oil. Working in batches, sear the steak pieces until browned on all sides, then transfer them into the slow cooker. Add more oil if needed for subsequent batches.
- Add aromatics: Once all the steak bites are in the slow cooker, add the thinly sliced sweet onion and garlic. Toss gently to combine with the steak.
- Combine liquids and au jus: Pour the unsalted beef stock into the slow cooker. Sprinkle the au jus gravy mix evenly over the top, then layer the thin slices of unsalted butter.
- Slow cook: Cover the slow cooker with its lid and cook on the high setting for 3 to 4 hours, or on low for 6 to 8 hours. Stir the mixture every 30 minutes if possible to ensure even cooking and coating of flavors.
- Serve: Once done, serve the steak bites warm, optionally garnished with fresh chopped parsley to add a pop of color and freshness.
Notes
- For best results, use sirloin steak or another tender cut suitable for quick searing and slow cooking.
- If au jus gravy mix is unavailable, substitute with beef bouillon powder mixed into the beef stock and adjust seasoning accordingly.
- Stirring occasionally while slow cooking enhances flavor distribution and prevents sticking.
- Serve with mashed potatoes, rice, or crusty bread to soak up the delicious gravy.
- Leftovers can be refrigerated for up to 3 days and reheated gently on the stovetop or microwave.
