Instructions
- Prepare the Dressing: In a large salad bowl, combine the olive oil, water, minced dill, garlic powder, rice vinegar, agave syrup, Dijon mustard, salt, and pepper. Whisk thoroughly until all ingredients are well blended. Sample to adjust seasoning if necessary, then set aside to let flavors meld.
- Slice the Vegetables: Using a mandoline or sharp knife, thinly slice the radishes, cucumber, and red onion. Ensure the slices are uniformly thin for the best texture and flavor absorption.
- Combine Salad Ingredients: Add the sliced radishes, cucumber, red onion, cherry tomatoes, and optional garbanzo beans to the bowl with the prepared dressing. Toss everything together gently until the vegetables are fully coated with the dressing.
- Refrigerate: Cover the salad and refrigerate for at least 30 minutes to allow the flavors to develop. For best results, let the salad sit overnight in the fridge.
