Meat Mixture

  • 1 packet taco seasoning
  • 1 can (10 oz) cream of chicken or cream of mushroom soup
  • 1 cup sour cream
  • 1 can (10 oz) Rotel tomatoes (optional for spice)

Casserole Layers

  • 1 large bag Nacho Cheese Doritos, slightly crushed
  • 2 cups shredded Mexican blend cheese

Instructions

  1. Preheat Oven: Preheat the oven to 350°F (175°C) to prepare for baking the casserole.
  2. Brown Beef and Onion: In a skillet over medium-high heat, cook the ground beef together with the diced onion until the beef is fully browned and the onion is softened. Drain any excess grease to ensure the dish isn’t too oily.
  3. Mix Seasoning and Cream: Stir in the packet of taco seasoning, cream of chicken or mushroom soup, sour cream, and Rotel tomatoes if using. Mix thoroughly until the mixture is creamy and well combined, creating a flavorful filling.
  4. Layer Doritos: Spread a thick layer of slightly crushed Nacho Cheese Doritos evenly on the bottom of a baking dish to form the base of the casserole.
  5. Add Beef Mixture: Evenly spread half of the beef and creamy mixture over the layer of Doritos to build flavor layers.
  6. Add Cheese Layer: Sprinkle one cup of shredded Mexican blend cheese over the beef mixture to add gooey richness.
  7. Repeat Layers: Add another layer of crushed Doritos on top, followed by the remaining beef mixture, and finish with the remaining cup of shredded cheese on top.
