  • 1 lb. Lean ground beef
  • 2 Tbsp. Taco seasoning
  • 1 Medium iceberg lettuce, chopped
  • 1 Large tomato, diced
  • 12 C. Nacho cheese Doritos chips
  • 1 C. Catalina dressing

Instructions

  1. Heat the olive oil: Place a skillet on the stove over medium-high heat and add the olive oil, heating it until shimmering.
  2. Cook the ground beef: Add the lean ground beef and taco seasoning to the skillet. Cook thoroughly, stirring occasionally, until the beef is completely browned. Drain any excess fat and set the meat aside to cool.
  3. Prepare the vegetables: Chop the medium iceberg lettuce and place it into a large mixing bowl. Dice the large tomato and add it to the bowl.
  4. Combine salad ingredients: Add the cooled seasoned ground beef, 1 to 2 cups of nacho cheese Doritos chips, and 1 cup of Catalina dressing to the bowl with the lettuce and tomato. Toss all ingredients well until evenly mixed.
  5. Serve with toppings: Transfer the salad to serving plates or bowls, and optionally garnish with sour cream and guacamole as desired to enhance flavor and creaminess.
