Chicken Filling

  • 1 tbsp oil
  • 1 lb chicken breast, cut into small pieces
  • 1 tbsp taco seasoning
  • 1/2 large bell pepper, diced (any color)
  • 1/2 yellow onion, diced

Quesadillas

  • 2 tbsp unsalted butter
  • 6 flour tortillas
  • 2 cups Mexican cheese blend

Instructions

  1. Cook Chicken: Preheat a skillet over medium heat and add 1 tablespoon of oil. Add the chicken pieces and sprinkle with taco seasoning. Cook the chicken for about 4 minutes until it starts to brown.
  2. Add Veggies: Add the diced bell pepper and onion to the skillet with the chicken. Continue cooking for another 5 minutes or until the chicken is fully cooked through and the vegetables soften and gain some color. Remove from heat and set aside.
  3. Build Quesadilla: Clean the skillet and add a bit of butter or oil over medium heat. Place one flour tortilla onto the skillet. Sprinkle a layer of Mexican cheese over half of the tortilla, then add a portion of the chicken and vegetable mixture on top of the cheese. Add another layer of cheese over the chicken mixture, then carefully fold the tortilla in half to enclose the filling.
  4. Cook Quesadilla: Allow the quesadilla to cook for a few minutes until the bottom is golden brown. Carefully flip the quesadilla and continue cooking until the other side is also golden brown and the cheese inside has melted completely. Repeat these steps for the remaining tortillas and filling.
  5. Serve: Remove the cooked quesadillas from the skillet and serve immediately while warm and cheesy.
