  • 2 tablespoons chopped green onions (optional, for garnish)

Instructions

  1. Prepare the skillet: Preheat a large skillet or wok over medium heat to ensure even cooking.
  2. Sauté vegetables: Add 2 tablespoons of sesame oil to the skillet, then add 1 cup chopped white onion and 1 cup frozen peas and carrots. Cook until the vegetables are tender, stirring occasionally.
  3. Scramble the eggs: Push the vegetables to one side of the skillet. Pour the 2 lightly beaten eggs onto the open side. Using a spatula, scramble the eggs gently until fully cooked but still moist.
  4. Combine eggs and vegetables: Mix the scrambled eggs together with the sautéed vegetables in the skillet evenly.
  5. Add rice and soy sauce: Add 3 cups of cooked rice into the skillet with the eggs and vegetables. Pour 2-3 tablespoons of soy sauce on top, then stir thoroughly to combine all ingredients and heat the mixture through.
  6. Serve: Transfer the fried rice to plates, garnish with 2 tablespoons chopped green onions if desired, and serve immediately for best flavor and texture.
