Ingredients
Scale
Vegetables
- 1/2 large yellow onion (chopped into 1/2-inch pieces)
- 1 green bell pepper (chopped into 1/2-inch pieces)
- 5 cups cubed sweet potatoes (1/2-inch cubes preferred)
- 3 garlic cloves (freshly minced)
Proteins and Dairy
- 1 lb turkey sausage (uncooked)
- 10 large eggs
- 1/2 cup grated mozzarella cheese
- 1/2 cup whole milk
Seasonings and Oils
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp pepper
- 2 tbsp avocado oil
Instructions
- Preheat Oven and Prepare the Baking Dish: Preheat your oven to 350°F (175°C). Grease a 9×13-inch casserole dish to prevent sticking. Meanwhile, chop all vegetables as specified.
- Cook the Vegetables: Heat avocado oil in a Dutch oven or large saucepan over medium heat. Add chopped onion, green bell pepper, and cubed sweet potatoes. Cook, stirring occasionally, for 8-9 minutes until vegetables soften. During the last 1-2 minutes, add minced garlic and sauté until fragrant. Remove vegetables from pan and spread them evenly in the prepared casserole dish.
- Cook the Sausage: In the same pan, add the turkey sausage. Cook over medium heat, breaking it into small pieces until fully cooked through and no longer pink. Combine the cooked sausage with the vegetables in the casserole dish and mix well.
- Prepare the Egg Mixture: In a mixing bowl, whisk together the 10 eggs, 1/2 cup whole milk, dried thyme, salt, pepper, and grated mozzarella cheese until smooth and well combined.
- Combine and Bake: Pour the egg mixture over the vegetable and sausage mixture in the casserole dish. Gently stir to distribute the eggs evenly through the ingredients. Place the dish in the preheated oven and bake for 40-45 minutes or until the center is firm. If the top browns too quickly, cover loosely with foil halfway through baking to prevent burning.
- Cool and Serve: Remove the casserole from the oven and let it cool for about 15 minutes before cutting and serving. This resting time helps the casserole set and enhances the flavors.
Notes
- Use whole milk for a richer texture, or substitute with a lower-fat milk if desired.
- Feel free to substitute mozzarella with cheddar or your favorite melting cheese.
- Turkey sausage can be replaced with pork sausage or a plant-based sausage for different flavor profiles.
- Make sure sweet potatoes are cut into uniform cubes to ensure even cooking.
- Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
- To make it gluten free, verify that sausage and all ingredients have no gluten-containing additives.
