Ingredients
Scale
Roll Ups
- 1 lb thinly sliced roast beef (deli style or leftover)
- 1½ cups shredded mozzarella or provolone cheese
- 4 large flour tortillas
- 2 tablespoons butter, melted
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried parsley
Au Jus
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon soy sauce
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prepare for baking the roll ups.
- Assemble Roll Ups: Lay each flour tortilla flat on a surface. Layer thinly sliced roast beef and shredded mozzarella or provolone cheese down the center of each tortilla evenly.
- Roll the Tortillas: Roll each tortilla tightly around the filling and place seam-side down on the prepared baking sheet to prevent unrolling during baking.
- Season and Add Butter: Brush the tops of the rolled tortillas with melted butter, then sprinkle evenly with garlic powder, onion powder, and dried parsley for added flavor and a golden finish.
- Bake: Bake the tortilla roll ups in the preheated oven for 12–15 minutes, or until the tortillas turn golden brown and the cheese inside is melted.
- Prepare Au Jus: While the roll ups bake, combine beef broth, Worcestershire sauce, soy sauce, onion powder, garlic powder, salt, and pepper in a saucepan. Bring to a simmer and cook for 5–7 minutes to develop rich flavors.
- Slice and Serve: Remove the roll ups from the oven and slice them into bite-sized pieces. Serve warm alongside the hot au jus for dipping, enhancing each savory bite.
Notes
- Use thinly sliced roast beef, either deli style or leftover, for the best texture.
- Substitute mozzarella with provolone for a slightly sharper cheese flavor.
- For a crispier exterior, broil the roll ups for 1-2 minutes after baking, watching carefully to avoid burning.
- The au jus can be prepared ahead and warmed just before serving.
- Adjust salt and pepper in the au jus according to your taste preference.
