Fruit Pizza Recipe

  • Author: Rafael
  • Total Time: 1 hour 25 minutes
  • Yield: 8 servings 1x

Description

This vibrant Fruit Pizza features a soft, golden-baked sugar cookie crust topped with a creamy vanilla-flavored cream cheese frosting and a colorful medley of fresh fruits arranged beautifully. It’s a delightful no-bake dessert after the cookie base is baked, perfect for celebrations or a refreshing treat.

Ingredients

Scale

Cookie Base

  • 16 oz refrigerated cookie dough (softened at room temperature for 1 hr)

Cream Cheese Frosting

  • 8 oz cream cheese (softened to room temperature)
  • 2 Tbsp unsalted butter (softened to room temperature)
  • 2 tsp vanilla extract
  • 2 cups powdered sugar

Fruit Topping

  • 1 ½ cups sliced strawberries
  • 2 kiwis (skin removed and sliced)
  • ½ cup blueberries
  • 9 oz canned mandarin orange sections (drained and patted dry with a paper towel)

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350℉ (177℃). Spray a round pizza pan with non-stick cooking spray or line it with parchment paper to prevent sticking.
  2. Shape and Bake Cookie Dough: Allow the refrigerated cookie dough to soften at room temperature for about 1 hour. Using your palms and fingertips, press the dough evenly into the shape of the pizza pan. Bake in the preheated oven for 15 minutes or until the crust is golden brown. Remove and let it cool completely before frosting.
  3. Make the Cream Cheese Frosting: In a large bowl, beat together the softened cream cheese and unsalted butter. Add powdered sugar and vanilla extract. Using a hand mixer, beat the mixture for 2-3 minutes until it becomes smooth and creamy without clumps.
  4. Spread Frosting on Cooled Cookie: Once the cookie crust has cooled, spread the cream cheese frosting evenly over the top using a spatula. Leave a small border around the edge of the cookie exposed for a nice presentation.
  5. Arrange the Fruit Toppings: Wash and prepare the fruit by slicing the strawberries and kiwis, and ensuring the mandarin orange sections are drained and dried. Starting from the outer edge, arrange the strawberries, kiwis, blueberries, and mandarin oranges in circular layers moving inward until the top is fully decorated.
  6. Serve and Store: Serve the fruit pizza immediately for the freshest taste. Alternatively, refrigerate it until ready to serve. Use a sharp knife or a pizza cutter to slice into portions.

Notes

  • Allow the cookie crust to cool completely before spreading frosting to prevent melting or sliding.
  • Use fresh, ripe fruits for the best flavor and vibrant appearance.
  • Drain and pat dry canned fruits well to avoid sogginess.
  • Store leftovers in an airtight container in the refrigerator for up to 2 days.
  • For different flavors, try swapping cookie dough for sugar cookie or snickerdoodle dough.
