Ingredients
Scale
Vegetables
- 1/2 onion, chopped
- 1/2 head green cabbage, chopped
- 1 pound (450g) kale, Lacinato or dinosaur, washed, and thinly sliced
- 4 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
Oils and Fats
- 4 tablespoons unsalted butter (or ghee)
- 2 tablespoons avocado oil, coconut oil, or olive oil
Seasonings and Liquids
- 2 tablespoons low sodium vegetable stock
- 1/2 teaspoon salt and pepper, or to taste
- 1/2 teaspoon red chili pepper flakes, or to taste
Instructions
- Heat Fat and Sauté Onion: Heat the butter and oil in a large pan or skillet over medium-high heat. Once hot, add the chopped onion and sauté until softened, about 3 minutes, stirring occasionally.
- Cook the Cabbage: Add the chopped cabbage to the pan and cook for about 4-5 minutes, stirring occasionally, until the cabbage softens and starts to caramelize on the edges.
- Add Kale and Seasonings: Incorporate the thinly sliced kale, minced garlic, salt, pepper, and red chili pepper flakes into the pan. Cook for about 8-10 minutes until all the vegetables are well-browned, softened, and flavorful.
- Deglaze the Pan: Pour in the low sodium vegetable stock to deglaze the pan. Use a wooden spoon to scrape up any browned bits from the bottom, cooking for 2 minutes to reduce the sauce slightly.
- Finish and Serve: Cook for an additional 30 seconds until fragrant. Adjust seasoning with more pepper if needed, sprinkle with fresh parsley, and serve the Garlic Sautéed Cabbage Kale Skillet immediately. Enjoy!
