  • Author: Rafael
  • Total Time: 30 minutes
  • Yield: 4 servings 1x
  • Diet: Low Salt

Description

A flavorful Garlic Sautéed Cabbage and Kale Skillet that combines tender green cabbage and Lacinato kale, cooked with aromatic garlic, onions, and a touch of chili flakes, all finished with fresh parsley. This quick and healthy vegetable dish is perfect as a side or a light main, delivering a caramelized texture with vibrant, savory flavors.

Ingredients

Scale

Vegetables

  • 1/2 onion, chopped
  • 1/2 head green cabbage, chopped
  • 1 pound (450g) kale, Lacinato or dinosaur, washed, and thinly sliced
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped

Oils and Fats

  • 4 tablespoons unsalted butter (or ghee)
  • 2 tablespoons avocado oil, coconut oil, or olive oil

Seasonings and Liquids

  • 2 tablespoons low sodium vegetable stock
  • 1/2 teaspoon salt and pepper, or to taste
  • 1/2 teaspoon red chili pepper flakes, or to taste

Instructions

  1. Heat Fat and Sauté Onion: Heat the butter and oil in a large pan or skillet over medium-high heat. Once hot, add the chopped onion and sauté until softened, about 3 minutes, stirring occasionally.
  2. Cook the Cabbage: Add the chopped cabbage to the pan and cook for about 4-5 minutes, stirring occasionally, until the cabbage softens and starts to caramelize on the edges.
  3. Add Kale and Seasonings: Incorporate the thinly sliced kale, minced garlic, salt, pepper, and red chili pepper flakes into the pan. Cook for about 8-10 minutes until all the vegetables are well-browned, softened, and flavorful.
  4. Deglaze the Pan: Pour in the low sodium vegetable stock to deglaze the pan. Use a wooden spoon to scrape up any browned bits from the bottom, cooking for 2 minutes to reduce the sauce slightly.
  5. Finish and Serve: Cook for an additional 30 seconds until fragrant. Adjust seasoning with more pepper if needed, sprinkle with fresh parsley, and serve the Garlic Sautéed Cabbage Kale Skillet immediately. Enjoy!

Notes

  • You can substitute butter with ghee or your preferred oil as indicated.
  • Adjust chili flakes to your preferred spice level.
  • Make sure to wash kale thoroughly to remove any grit before slicing.
  • Use a large skillet to allow vegetables space to caramelize properly without steaming.
  • This dish pairs well with grilled meats or as a side to any protein of choice.
