Instructions
- Cook the ground beef: Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spatula, until browned, about 5 minutes. Drain excess fat if needed.
- Sauté the vegetables: Add the finely chopped onions, diced green bell peppers, and minced garlic to the skillet with the beef. Sauté for 3-4 minutes until the vegetables are softened and fragrant.
- Season the mixture: Stir in Worcestershire sauce, ketchup, Dijon mustard, smoked paprika, salt, and black pepper. Let the mixture simmer for 3-5 minutes to meld the flavors together.
- Make the cheese sauce: In a small saucepan, melt 1 tablespoon of butter over medium heat. Stir in the flour and cook for 1 minute to create a roux. Gradually whisk in the warm milk until smooth and thickened. Add the shredded provolone or white American cheese and stir until melted and creamy.
- Toast the buns: Spread butter on the inside of each brioche or hamburger bun and toast them in a hot pan for 1-2 minutes until golden brown and slightly crispy.
- Assemble the sloppy joes: Spoon the savory beef and vegetable mixture generously onto the toasted buns, then drizzle the creamy cheese sauce over the top. Add extra provolone or cheddar cheese slices if desired for an extra cheesy finish.
