This Greek Salmon recipe features a perfectly roasted center-cut salmon fillet infused with a vibrant Greek-style sauce made from lemon, garlic, oregano, and fresh dill. Baked alongside fresh green onions and cherry tomatoes, this dish offers a flavorful and healthy Mediterranean-inspired meal that’s quick to prepare and sure to impress.

Ingredients

Scale

Greek-Style Sauce

  • 1 lemon, zested and juiced
  • 1 to 2 garlic cloves, minced
  • 2 teaspoons Greek oregano
  • 3 tablespoons chopped fresh dill, plus more for garnish
  • About 1/3 cup extra virgin olive oil

Main Ingredients

  • 1 pound center cut salmon fillet
  • Kosher salt, to taste
  • Black pepper, to taste
  • 2 green onions, trimmed and chopped (both white and green parts)
  • 1 cup cherry tomatoes

Instructions

  1. Preheat Oven and Prepare Dish: Position a rack in the center of the oven and preheat it to 400°F (200°C). Lightly oil a baking dish large enough to hold the salmon fillet.
  2. Make the Greek Sauce: In a small bowl, whisk together the lemon juice, half of the lemon zest, minced garlic, Greek oregano, chopped fresh dill, and enough extra virgin olive oil (about 1/3 cup) to generously coat the salmon.
  3. Prepare the Salmon: Pat the salmon fillet dry with paper towels. Season both sides with kosher salt and black pepper. Place the salmon in the prepared baking dish. Scatter the chopped green onions and cherry tomatoes evenly around the salmon. Spoon the prepared Greek sauce over the salmon and vegetables.
  4. Roast the Salmon: Bake the salmon in the preheated oven for approximately 10 minutes, or until the internal temperature reaches 140°F (60°C). Allow carryover cooking to bring the temperature up to 145°F (63°C). The salmon should flake easily with a fork when done.
  5. Garnish and Serve: Sprinkle the remaining lemon zest and additional chopped fresh dill over the roasted salmon before serving. Enjoy warm.

Notes

  • Ensure not to overcook the salmon to keep it moist and tender.
  • You can substitute fresh dill with dried dill if fresh is unavailable, but reduce the quantity by half.
  • Cherry tomatoes add a burst of sweetness; you can substitute with grape tomatoes if preferred.
  • This dish pairs well with a side of roasted vegetables or a light Greek salad.
  • For a dairy-free meal, this recipe is naturally suitable as is.
