  • Author: Rafael
  • Total Time: 20 minutes
  • Yield: 8 pancakes 1x
  • Diet: Vegetarian

Description

These Greek Yogurt Pancakes are a fluffy and protein-packed breakfast option, combining the tangy creaminess of Greek yogurt with a classic pancake batter. Perfectly golden and tender, they are quick to prepare and make a wholesome start to your day.

Ingredients

Scale

Dry Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1/4 cup granulated sugar

Wet Ingredients

  • 1 whole large egg
  • 2/3 cups plain Greek yogurt
  • 2/3 cups milk
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons melted butter

Instructions

  1. Whisk Dry Ingredients: In a mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and granulated sugar until well combined.
  2. Mix Wet Ingredients: In a separate bowl, whisk the egg, plain Greek yogurt, milk, and vanilla extract until the mixture is smooth and fully incorporated.
  3. Combine Mixtures: Add the dry flour mixture to the wet ingredients and stir gently until they are just barely combined; the batter should still have some lumps.
  4. Add Melted Butter: Pour in the melted butter and mix until evenly incorporated into the batter.
  5. Rest the Batter: Let the batter rest for 10 minutes to allow ingredients to meld and improve texture.
  6. Preheat Skillet: Heat a large skillet or griddle over medium-high heat to approximately 350ºF. Lightly grease the surface with non-stick spray or butter.
  7. Cook Pancakes: Use an ice cream scoop to portion the batter onto the hot skillet. Cook each pancake for 2–3 minutes until bubbles form on the surface, then flip and cook for another 2–3 minutes until golden brown and cooked through.

Notes

  • Do not overmix the batter; lumps are fine and will help keep the pancakes fluffy.
  • Resting the batter gives a better texture but if you are in a hurry, you can skip this step.
  • Use a non-stick skillet or well-seasoned griddle to prevent sticking.
  • Adjust heat as necessary to avoid burning before the pancakes cook through.
  • Serve warm with maple syrup, fresh fruit, or your favorite pancake toppings.
