Instructions
- Preheat Oven and Prepare Ingredients: Preheat your oven to 350°F. Finely chop the fresh spinach, dice the onion, and mince the garlic cloves. Grate the parmesan cheese and set aside.
- Sauté Onions and Spinach: Heat olive oil in a large skillet over medium heat. Add diced onions and sauté for 3-5 minutes until translucent. Stir in the minced garlic and chopped spinach, cooking for another 3-5 minutes until the spinach wilts down.
- Mix Yogurt and Cheese: In a separate bowl, combine the plain Greek yogurt, reduced fat mayonnaise, 1/4 cup parmesan, 1/2 cup mozzarella, salt, black pepper, and red pepper flakes if using. Mix until well blended.
- Combine All Ingredients: Add the Greek yogurt mixture to the skillet with the cooked spinach and onions. Stir everything together and let it cook on the stove for 1-2 minutes to meld flavors.
- Prepare for Baking: Transfer the mixture to an oven-safe baking dish, ideally the dish you will serve from. Top the mixture with the remaining 1/2 cup parmesan and 1/2 cup mozzarella cheese or adjust according to your preference and the size of your dish.
- Bake and Broil: Place the baking dish in the preheated oven and bake for 15-20 minutes until the dip is hot and bubbly. After baking, switch the oven to broil and broil for 2-3 minutes to achieve a golden brown and bubbly top. Watch closely to avoid burning.
