Greek Yogurt Spinach Dip Recipe

  • Author: Rafael
  • Total Time: 45 minutes
  • Yield: 6 servings 1x
  • Diet: Low Fat

Description

This Greek Yogurt Spinach Dip is a creamy, cheesy appetizer perfect for parties or casual snacking. Fresh spinach is sautéed with onions and garlic, then combined with Greek yogurt, reduced-fat mayonnaise, and a blend of parmesan and mozzarella cheeses. Baked until bubbly and golden, it offers a rich yet lighter alternative to traditional spinach dips.

Ingredients

Scale

Vegetables

  • 1 small sweet onion, diced
  • 45 garlic cloves, minced
  • 16 oz fresh spinach, chopped

Dairy and Condiments

  • 1/2 cup plain Greek yogurt
  • 1/4 cup reduced fat mayonnaise
  • 1 cup parmesan cheese, grated or shredded (divided)
  • 1 cup mozzarella cheese, shredded (divided)

Oils and Spices

  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. Preheat Oven and Prepare Ingredients: Preheat your oven to 350°F. Finely chop the fresh spinach, dice the onion, and mince the garlic cloves. Grate the parmesan cheese and set aside.
  2. Sauté Onions and Spinach: Heat olive oil in a large skillet over medium heat. Add diced onions and sauté for 3-5 minutes until translucent. Stir in the minced garlic and chopped spinach, cooking for another 3-5 minutes until the spinach wilts down.
  3. Mix Yogurt and Cheese: In a separate bowl, combine the plain Greek yogurt, reduced fat mayonnaise, 1/4 cup parmesan, 1/2 cup mozzarella, salt, black pepper, and red pepper flakes if using. Mix until well blended.
  4. Combine All Ingredients: Add the Greek yogurt mixture to the skillet with the cooked spinach and onions. Stir everything together and let it cook on the stove for 1-2 minutes to meld flavors.
  5. Prepare for Baking: Transfer the mixture to an oven-safe baking dish, ideally the dish you will serve from. Top the mixture with the remaining 1/2 cup parmesan and 1/2 cup mozzarella cheese or adjust according to your preference and the size of your dish.
  6. Bake and Broil: Place the baking dish in the preheated oven and bake for 15-20 minutes until the dip is hot and bubbly. After baking, switch the oven to broil and broil for 2-3 minutes to achieve a golden brown and bubbly top. Watch closely to avoid burning.

Notes

  • Use fresh spinach for the best flavor and texture.
  • If you prefer a spicier dip, increase the red pepper flakes.
  • Serve warm with pita chips, crackers, or fresh vegetables.
  • You can prepare this dip a few hours ahead and bake just before serving.
  • For a lower-fat version, opt for low-fat cheeses and mayonnaise.
