Ingredients
Scale
Chickpeas
- 3 (15 oz) cans chickpeas, drained and rinsed
- 1 1/2 teaspoons baking soda
Hummus Base
- 1/2 cup tahini
- 2 Tablespoons extra virgin olive oil
- 1 large lemon, juiced
- 1 large lime, juiced
Seasonings
- 1 1/2 teaspoons ground cumin
- 1 teaspoon sea salt (to taste)
- 1/2 teaspoon white pepper
Additional Liquids
- 1/2 cup ice water (with ice), plus more if needed
Instructions
- Rinse Chickpeas: Drain and thoroughly rinse canned chickpeas until the water runs clear to remove excess sodium and preserve freshness.
- Cook Chickpeas with Baking Soda: Submerge the drained chickpeas in a pot of water over high heat, add 1 1/2 teaspoons of baking soda, and bring to a boil. Reduce heat to medium and cook for 20 minutes, which helps soften the chickpeas and improves texture.
- Cool and Peel: Remove the pot from heat, drain, and rinse the cooked chickpeas again with cool water. While submerged, gently rub the chickpeas to remove their skins for an ultra-smooth hummus.
- Combine Ingredients: Transfer the peeled chickpeas to a high-powered blender or food processor. Add tahini, olive oil, lemon juice, and lime juice.
- Pulse for Smoothness: Pulse the mixture until it becomes smooth and well combined.
- Season and Adjust Consistency: Add cumin, sea salt, white pepper, ice cubes, and ice water. Pulse again until creamy and smooth. Add additional ice water as needed to reach your preferred hummus consistency.
Notes
