Broth and Aromatics

  • 1 tsp olive oil
  • 1 inch ginger, minced
  • 2 cloves garlic, minced
  • 1 large onion, diced
  • 1/4 cup cilantro stems (optional)
  • 8 cups chicken stock
  • 1 cup water

Main Ingredients

  • 6 mushrooms, sliced thin
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 11 tsp salt
  • 1/2 tsp pepper
  • 23 baby bok choy, quartered
  • 1/2 lb shrimp, cleaned and peeled
  • 1525 frozen wontons/dumplings
  • 1/2 cup green onions, sliced

Thickening Agent

  • 1 tsp cornstarch

Instructions

  1. Sauté Aromatics: Heat 1 tsp olive oil in a pot over medium-high heat. Add minced ginger, garlic, diced onion, and cilantro stems. Sauté for 3-4 minutes until the onions turn translucent and the flavors meld together.
  2. Add Broth and Vegetables: Pour in 8 cups of chicken stock and 1 cup of water. Bring the mixture to a boil. Once boiling, add sliced mushrooms, quartered baby bok choy, soy sauce, and sesame oil to the pot.
  3. Add Protein and Wontons: Carefully add the cleaned and peeled shrimp along with 15-20 frozen wontons and half of the sliced green onions. Return the soup to a boil and cook for 5-6 minutes, stirring frequently to prevent sticking and to ensure even cooking.
  4. Season Soup: Taste the broth and season with 1 to 1 teaspoon of salt and 1/2 teaspoon pepper according to your preference.
  5. Thicken Broth: In a small bowl, mix 1 teaspoon cornstarch with 1 teaspoon cold water to make a slurry. Add this slurry to the boiling soup during the last 1-2 minutes of cooking. Stir well until the broth thickens slightly and develops a glossy appearance.
  6. Serve Hot: Remove the soup from heat. Garnish with the remaining sliced green onions and serve immediately while warm.

Notes

  • Frozen wontons can be replaced with fresh wontons if available.
  • Adjust the salt based on the sodium level in your chicken stock.
  • For a spicier version, add chili oil or fresh sliced chili peppers.
  • Cilantro stems are optional but add a lovely herbal depth to the broth.
  • Make sure to stir the soup often to prevent wontons from sticking to the bottom of the pot.
