Description

Honey Cinnamon Oatmeal Bread is a soft, slightly sweet, and warmly spiced loaf perfect for breakfast or snacks. Infused with cinnamon and naturally sweetened with honey, this bread combines hearty rolled oats with a tender crumb for a comforting homemade treat.

Ingredients

Scale

Oat Mixture

  • 1 cup rolled oats
  • 1 cup warm milk (240 ml)

Yeast Mixture

  • 2 teaspoons active dry yeast
  • 1/4 cup warm water (60 ml)
  • 1 tablespoon honey (for yeast activation)

Dough

  • 1/4 cup honey (60 ml)
  • 1/4 cup melted butter (60 ml)
  • 3 cups all-purpose flour (375 g)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Instructions

  1. Soften Oats: In a small bowl, combine the rolled oats with warm milk and let them sit for 10 minutes to soften, creating a creamy oat mixture essential for the dough’s texture.
  2. Activate Yeast: In a separate bowl, dissolve the active dry yeast in warm water, add 1 tablespoon honey, and let the mixture sit for 5-10 minutes until it becomes bubbly and frothy, indicating the yeast is active.
  3. Combine Wet Ingredients: Mix the softened oats, melted butter, and 1/4 cup honey into the yeast mixture, stirring until all wet ingredients are fully incorporated.
  4. Make Dough: Gradually add the all-purpose flour, ground cinnamon, and salt to the wet mixture, stirring until a shaggy dough forms that will be ready for kneading.
  5. Knead Dough: Transfer the dough to a lightly floured surface and knead for 8-10 minutes until it becomes smooth and elastic. Add small amounts of flour if the dough is too sticky to handle.
  6. First Rise: Place the dough in an oiled bowl, cover it with a damp cloth, and let it rise in a warm place for 1 to 1.5 hours, or until it doubles in size.
  7. Shape & Second Rise: Punch down the risen dough, shape it into a log, place it in a greased loaf pan, cover, and allow it to rise again for 30-40 minutes until puffed.
  8. Bake Bread: Preheat your oven to 375°F (190°C) and bake the bread for 30-35 minutes until it turns golden brown and sounds hollow when tapped on the bottom.
  9. Cool & Serve: Remove the bread from the pan and let it cool on a wire rack before slicing to ensure the crumb sets and slices cleanly.

Notes

  • Make sure the milk and water are warm but not hot, around 100-110°F (38-43°C), to properly activate the yeast without killing it.
  • You can substitute all-purpose flour with whole wheat flour for a healthier version, but expect a denser loaf.
  • Store the bread in an airtight container at room temperature for up to 3 days or freeze slices for longer storage.
  • This bread pairs wonderfully with butter, jam, or cream cheese for a delightful breakfast or snack.
  • If dough is too sticky during kneading, add flour gradually to prevent over-drying which can make the bread tough.
