Shrimp

  • 450g large shrimp, peeled & deveined
  • 2 tbsp honey
  • 2 tbsp soy sauce
  • 3 cloves garlic, minced
  • 1 tbsp lime juice
  • 1 tbsp olive oil or sesame oil
  • ½ tsp chili flakes (optional for spice)
  • Salt & pepper to taste

Broccoli

  • 2 cups broccoli florets
  • 1 tbsp olive oil
  • Pinch of salt

Coconut Rice

  • 1 cup jasmine or basmati rice
  • 1 cup coconut milk
  • 1 cup water
  • ½ tsp salt
  • 1 tsp sugar (optional, enhances flavor)

Instructions

  1. Make the coconut rice: Rinse the rice under cold water until the water runs clear to remove excess starch. In a medium saucepan, combine the rinsed rice, coconut milk, water, salt, and sugar. Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 12–15 minutes, or until the rice is tender and has absorbed the liquid. Remove from heat, fluff the rice with a fork, and set aside.
  2. Cook the broccoli: Either steam the broccoli florets for 3–4 minutes until they turn bright green and are just tender, or sauté them in a skillet with olive oil over medium heat for the same amount of time. Once cooked, drizzle with olive oil and season lightly with a pinch of salt to enhance flavor.
  3. Cook the shrimp: In a bowl, prepare the honey garlic sauce by mixing honey, soy sauce, minced garlic, lime juice, and chili flakes if using. Heat the olive or sesame oil in a skillet over medium-high heat. Add the shrimp and cook for about 1–2 minutes per side until they turn pink and opaque. Pour the honey garlic sauce over the shrimp and cook for an additional minute, stirring to coat the shrimp and allowing the sauce to thicken and become glossy.
  4. Assemble the dish: Plate a bed of the fluffy coconut rice, top with the honey garlic shrimp, and add the sautéed or steamed broccoli on the side. Drizzle any remaining honey garlic sauce over the shrimp and broccoli to finish.

Notes

  • For extra heat, increase or adjust chili flakes to taste.
  • Use sesame oil instead of olive oil for a nuttier flavor in the shrimp.
  • Make sure to rinse the rice well to prevent it from becoming gummy.
  • If steaming broccoli, avoid overcooking to retain vibrant color and crunch.
