Squash and Seasoning

  • 1 medium acorn squash (about 700 g / 1.5 lb), halved and seeded
  • 2 tablespoons olive oil (30 ml)
  • Salt and black pepper, to taste

Toppings

  • 100 g (3.5 oz) Brie cheese, sliced
  • 2 tablespoons honey (40 ml)
  • 1/4 cup cranberry sauce (60 g), preferably whole-berry
  • 1 tablespoon fresh thyme, chopped (optional)

Instructions

  1. Preheat and prepare squash: Preheat your oven to 400°F (200°C). Carefully halve the acorn squash and remove the seeds.
  2. Season squash: Brush the cut sides of the squash with olive oil and season with salt and black pepper to your taste. Place the squash halves cut-side down on a baking sheet.
  3. Roast squash: Roast the squash in the preheated oven for 25 to 30 minutes or until the flesh is tender when pierced with a fork.
  4. Glaze with honey: Flip the squash halves over so cut-sides are up. Drizzle the honey evenly over each half, then return them to the oven for an additional 5 minutes to caramelize the honey slightly.
  5. Add Brie cheese: Remove the squash from the oven, add slices of Brie cheese into the hollowed center of each squash half. Allow the residual heat to gently melt the Brie.
  6. Add cranberry sauce and garnish: Spoon the cranberry sauce over the Brie-topped squash halves. Garnish with chopped fresh thyme if desired. Serve warm for best flavor.

Notes

  • You can substitute Brie with Camembert or any other soft melting cheese if preferred.
  • Whole-berry cranberry sauce adds texture and tartness; you may also use homemade cranberry relish.
  • For a vegan version, omit the Brie and use a plant-based cheese alternative.
  • To ensure even roasting, make sure squash halves are similar in size.
