Ingredients

Scale

For the Honey Lime Chicken Marinade

  • 2 large boneless, skinless chicken breasts (or 4 small)
  • 2 tablespoons honey
  • Juice and zest of 2 limes
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For the Mango Salsa

  • 1 large ripe mango, diced
  • ¼ cup red onion, finely chopped
  • 1 small jalapeño, seeded and minced (optional)
  • 2 tablespoons fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper, to taste

Instructions

  1. Marinate the Chicken: In a small bowl, whisk together honey, lime juice, lime zest, olive oil, minced garlic, cumin, smoked paprika, salt, and black pepper until well combined. Place the chicken breasts in a shallow dish or resealable bag, then pour the marinade over the chicken, making sure each piece is well coated. Seal and refrigerate for at least 30 minutes, or up to 12 hours to develop maximum flavor.
  2. Prepare the Mango Salsa: In a medium-sized bowl, combine the diced mango, finely chopped red onion, minced jalapeño (if using), and fresh chopped cilantro. Squeeze the juice of one lime over the mixture and season with salt and pepper to taste. Stir to combine and allow the salsa to rest for 10-15 minutes to let the flavors meld beautifully.
  3. Cook the Chicken (Choose One Method):
Grilling: Preheat your grill to medium-high heat. Grill the marinated chicken breasts for about 5-6 minutes per side, or until the internal temperature reaches 165°F (75°C). Remove from grill and let rest for 5 minutes before slicing.
Pan-Searing: Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Cook the chicken breasts for 5-7 minutes on each side until fully cooked through and nicely browned. Remove from heat and rest for a few minutes.
Baking: Preheat the oven to 400°F (200°C). Place the marinated chicken breasts in a baking dish and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C). Let rest a few minutes before slicing.
  4. Assemble and Serve: Slice the cooked chicken breasts and arrange on a serving plate. Spoon generous amounts of the fresh mango salsa over the chicken. Serve immediately with your favorite side such as rice, quinoa, salad, or warm tortillas for a delicious meal that balances sweet, tangy, and savory flavors.

Notes

  • Marinating the chicken overnight intensifies the flavors, but 30 minutes works well if you’re short on time.
  • The jalapeño in the salsa is optional; omit it if you prefer a milder salsa.
  • Make sure to let the chicken rest after cooking to keep it juicy and tender.
  • This recipe is versatile and works great with different cooking methods; choose based on your preference or available equipment.
  • For extra freshness, garnish with additional cilantro before serving.
