- 1 dried chili

- 2 tbsp tamari soy sauce
- 2 tbsp keto friendly chili sauce
- 2 tbsp keto friendly honey
- 1 tbsp vinegar
- 1 tsp arrowroot
- Salt and pepper to taste
Instructions
- Toast Cashews: Start by heating a dry pan over low to medium heat. Add the cashews and toast them while stirring frequently until they turn lightly golden in color, making sure they don’t burn. Remove from heat and set aside.
- Prepare Sauce: In a small glass measuring cup or bowl, combine tamari soy sauce, keto-friendly chili sauce, keto-friendly honey, vinegar, arrowroot, salt, and pepper. Stir well to mix and set aside.
- Heat Oil: Place a large non-stick skillet over medium-high heat and add sesame oil. Heat until the oil is hot and shimmering.
- Cook Chicken and Aromatics: Add the bite-sized chicken pieces to the skillet along with minced ginger, minced garlic, dried chili, salt, and pepper. Stir frequently and cook for 5 to 10 minutes, allowing the chicken to become golden and crispy on the outside. If using bell pepper, add it halfway through cooking.
- Add Sauce and Simmer: Pour the prepared sauce into the skillet with the cooked chicken. Allow the mixture to bubble and thicken while stirring occasionally for about 4 to 5 minutes.
- Finish and Garnish: Add the toasted cashews to the skillet and stir to combine. Sprinkle with sesame seeds and sliced green onion for garnish. Serve immediately and enjoy your keto-friendly cashew chicken!
