Ingredients

Scale

Base Ingredients

  • 2 ripe bananas, mashed (227g)
  • 2 cups rolled oats (old-fashioned or quick oats) (178g)
  • 1 scoop vanilla protein powder (Ora Organic preferred) (60g)
  • 1¾ cups plant-based milk (any variety) (414ml)
  • 1 tablespoon lemon juice, freshly squeezed (14g)
  • ½ teaspoon lemon zest (1g)
  • 1 tablespoon chia seeds (10g)
  • 1 teaspoon baking powder (10g)

Fruit & Sweetener

  • 1 cup frozen blueberries (140g)
  • 1 teaspoon maple syrup (7g)

Toppings

  • 6 tablespoons thick natural yogurt (85g)
  • Extra yogurt for topping (optional)
  • Peanut butter, for drizzling (optional)

Instructions

  1. Preheat Oven: Set your oven to 350°F (180°C) to prepare for baking the oats.
  2. Mash Bananas: Using a fork, mash the ripe bananas directly in a medium baking dish until mostly smooth to create a natural sweet base.
  3. Mix Dry and Wet Ingredients: Add the rolled oats, vanilla protein powder, plant-based milk, lemon juice, lemon zest, chia seeds, and baking powder to the mashed bananas in the dish. Stir thoroughly until fully combined.
  4. Prepare Blueberries: Microwave the frozen blueberries mixed with maple syrup for 1 to 2 minutes until they’re soft and juicy, bringing out their natural sweetness.
  5. Layer Blueberries: Spoon the warmed blueberry mixture evenly over the oat batter in the baking dish.
  6. Add Yogurt Swirl: Dollop the thick natural yogurt on top and gently swirl it through the oat mixture using a spoon for creamy texture and extra flavor.
  7. Bake: Place the baking dish in the preheated oven and bake for 35 to 40 minutes until the top turns golden and the center is just set.
  8. Cool and Serve: Allow the baked oats to cool for at least 10 minutes before serving. Enjoy warm, optionally topped with extra yogurt and a drizzle of peanut butter for added richness.

Notes

  • Use ripe bananas for natural sweetness and moisture.
  • Any plant-based milk works well; almond, oat, or soy milk are great choices.
  • Microwaving blueberries with maple syrup enhances their flavor and juiciness.
  • Feel free to substitute protein powder with more oats or nuts for a dairy-free option.
  • Letting the baked oats cool slightly helps them set and improves texture.
  • Peanut butter drizzle adds richness but can be omitted for a lighter dish.
