Description

This Light and Creamy Pink Fluff is a delightful, airy dessert combining the fruity sweetness of strawberry gelatin with the creamy texture of cottage cheese and nondairy topping. Enhanced by juicy pineapple, fresh strawberries, and optional marshmallows or nuts, this refreshing treat is perfect for a light dessert or potluck favorite.

Ingredients

Scale

Main Ingredients

  • 1 package (3 oz) strawberry gelatin powder (like Jell-O)
  • 1 cup boiling water
  • 1 cup cottage cheese
  • 1 cup nondairy dessert topping like Cool Whip, thawed
  • 1 can (8 oz) crushed pineapple, drained
  • 1 cup fresh strawberries, washed, dried, and sliced

Optional Ingredients

  • 1 cup mini marshmallows
  • or 1/2 cup chopped nuts (sliced almonds, walnuts, or pecans)

Instructions

  1. Dissolve Gelatin: In a large bowl, dissolve the strawberry gelatin powder in 1 cup of boiling water. Stir gently and continuously until completely dissolved. Let the mixture cool to room temperature, then set aside.
  2. Blend Cottage Cheese: Add the cottage cheese to a blender or food processor and pulse until smooth and uniform in texture.
  3. Combine Cottage Cheese and Gelatin: Use a bowl scraper to transfer the smooth cottage cheese into the bowl with the cooled gelatin mixture.
  4. Add Nondairy Topping: Gently fold in the thawed Cool Whip until well combined to maintain the light and fluffy character of the dessert.
  5. Incorporate Fruits: Add the drained crushed pineapple and sliced fresh strawberries. Stir gently to mix the ingredients evenly without breaking the fruit.
  6. Add Optional Ingredients: If desired, fold in either mini marshmallows or chopped nuts to add texture and additional flavor.
  7. Chill to Set: Transfer the mixture to a serving dish or individual cups. Refrigerate for at least 2 hours or until firmly set.
  8. Garnish and Serve: Before serving, garnish with extra sliced strawberries, a dollop of Cool Whip, or a sprinkle of nuts or mini marshmallows for presentation and added taste.

Notes

  • Make sure the gelatin mixture is completely cooled before adding the cottage cheese to prevent curdling.
  • You can substitute regular whipped topping if nondairy options are not available.
  • For added texture, chilled mini marshmallows work best when folded in just before chilling.
  • This dessert can be made a day in advance and kept refrigerated.
  • Use fresh ripe strawberries for the best flavor and appearance.
