  • 8 oz cherry tomatoes, small diced
  • 1/2 cup corn
  • 1/2 small red onion, small diced
  • 2 tbsp cilantro, chopped
  • 1 small lime, juiced
  • 1/4 tsp garlic powder
  • Salt, to taste

Avocado Mash

  • 2 avocados
  • 1/2 lime, juiced
  • 1 tbsp Sriracha sauce (or more, to taste)
  • Salt, to taste

Shrimp

  • 24 shrimp, peeled and deveined
  • 3/4 tsp garlic powder
  • 3/4 tsp onion powder
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/4 tsp cumin
  • 1/2 tsp dried oregano
  • 1/4 tsp Old Bay seasoning
  • Olive oil, for cooking (approx. 1-2 tbsp)

Crema

  • 1/2 cup Greek yogurt (or sour cream)
  • 1/2 lime, zest and juice
  • 1/2 tsp sugar

Assembly

  • 8 large romaine leaves
  • Everything Bagel Seasoning, to sprinkle

Instructions

  1. Make the Pico de Gallo: In a large bowl, combine the diced cherry tomatoes, corn, diced red onion, chopped cilantro, lime juice from 1 small lime, garlic powder, and salt to taste. Mix thoroughly and adjust seasoning as needed for balanced flavor.
  2. Prepare the Avocado Mash: In a medium bowl, add the peeled avocados, juice from 1/2 a lime, Sriracha sauce, and salt to taste. Roughly mash the mixture until combined but still slightly chunky for texture.
  3. Season the Shrimp: Toss the peeled and deveined shrimp with garlic powder, onion powder, chili powder, paprika, cumin, dried oregano, and Old Bay seasoning ensuring an even coat on all shrimp.
  4. Cook the Shrimp: Heat olive oil in a large skillet over medium-high heat until shimmering. Add the seasoned shrimp and cook for about 1-2 minutes on each side until they turn pink and opaque. Remove from heat.
  5. Make the Crema: Whisk together Greek yogurt, lime zest and juice from 1/2 lime, and sugar until smooth. Taste and adjust sweetness or acidity as desired.
  6. Assemble the Tacos: Wash and dry romaine leaves thoroughly. On each leaf, layer a spoonful of avocado mash, followed by some pico de gallo, then place three cooked shrimp. Drizzle generously with the crema and finish by sprinkling Everything Bagel Seasoning on top for extra flavor and crunch.

  • Use fresh shrimp for best flavor, but frozen shrimp thawed properly works well too.
