Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 350°F (175°C). Line a cookie sheet with parchment paper to prevent sticking and for easy cleanup.
  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, and salt until evenly combined. Set this mixture aside.
  3. Cream Butter and Sugars: In a separate mixing bowl, beat the softened butter with granulated sugar and brown sugar until the texture is smooth and creamy, indicating that the sugars are well incorporated.
  4. Add Egg and Vanilla: Beat in the lightly beaten egg and vanilla extract to the butter-sugar mixture until fully combined and smooth.
  5. Combine Wet and Dry Ingredients: Gradually add the flour mixture into the wet ingredients, beating just until combined. Do not overmix to keep the cookies tender.
  6. Form Cookies: Using a cookie scoop or spoon, scoop about 2-3 tablespoons of dough per cookie. Place each scoop on the parchment-lined cookie sheet, spacing them about 2 to 3 inches apart to allow for spreading. To better decorate after baking, place only about six cookies per baking sheet.
  7. Bake: Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are lightly browned but the centers remain soft.
  8. Decorate with M&Ms: Remove the cookies from the oven and immediately press nine M&Ms into each cookie to form a bunny face. Start by pressing one flat M&M with the ‘M’ side facing down for the face, then add two M&Ms on their sides above it for the bunny ears. You can position the ears straight up or one floppy for character.
  9. Cool: Transfer the decorated cookies to a cooling rack to cool completely and set.
  10. Prevent Overheating Dough: If the dough becomes too warm between batches, place the mixing bowl in the refrigerator to prevent excessive spreading during baking, which would make inserting the M&Ms difficult.
