For the Chicken Skewers
- 1½ lbs boneless, skinless chicken breasts, cubed

- Salt & black pepper to taste
- Wooden skewers, soaked in water
For the Hummus Spread & Garnish
- 1½ cups hummus (store-bought or homemade)
- 2 tbsp olive oil (for garnish)
- 1 tsp smoked paprika (for garnish)
- 2 tbsp fresh parsley, chopped
To Serve
- Warm pita bread
- Cherry tomatoes, halved
- Cucumber slices
- Kalamata olives
- Crumbled feta cheese
Instructions
- Marinate the chicken: In a bowl, whisk together olive oil, minced garlic, ground cumin, smoked paprika, dried oregano, lemon juice, salt, and black pepper. Add the cubed chicken and coat well. Let it marinate for a minimum of 30 minutes, up to 4 hours for deeper flavor.
- Prepare the skewers: Thread the marinated chicken pieces onto the soaked wooden skewers, leaving a little space between pieces to ensure even cooking.
- Preheat the grill: Heat your grill or grill pan to medium-high heat. Brush the surface lightly with oil to prevent the chicken from sticking.
