  • Salt & black pepper to taste
  • Wooden skewers, soaked in water

For the Hummus Spread & Garnish

  • 1½ cups hummus (store-bought or homemade)
  • 2 tbsp olive oil (for garnish)
  • 1 tsp smoked paprika (for garnish)
  • 2 tbsp fresh parsley, chopped

To Serve

  • Warm pita bread
  • Cherry tomatoes, halved
  • Cucumber slices
  • Kalamata olives
  • Crumbled feta cheese

Instructions

  1. Marinate the chicken: In a bowl, whisk together olive oil, minced garlic, ground cumin, smoked paprika, dried oregano, lemon juice, salt, and black pepper. Add the cubed chicken and coat well. Let it marinate for a minimum of 30 minutes, up to 4 hours for deeper flavor.
  2. Prepare the skewers: Thread the marinated chicken pieces onto the soaked wooden skewers, leaving a little space between pieces to ensure even cooking.
  3. Preheat the grill: Heat your grill or grill pan to medium-high heat. Brush the surface lightly with oil to prevent the chicken from sticking.
